Pastry has always been my passion. Growing up it was a way for my family to get together and enjoy delightful home made desserts.

Caramel French TOAST | Easy BREAKFAST Recipe !
Are you looking for a way to spice up your breakfast? Look no further because this caramel french toast is irresistible. Made with brioche toast and a caramel topping, this treat is simply great as a breakfast option with a cup of coffee or black tea. The french toast can also be decorated with some fruit to balance the sweetness and add some vitamins to the dish.
And the best part: this french toast is so easy to make and only takes a few minutes to bake.
Here are the ingredients:
Caramel Topping
*50 g sugar (1/4 cup)
*20 g butter (1 1/2 tbsp)
*130 g heavy cream (3/4 cup)
*A pinch of salt
Baking
*93 g full fat milk (1/2 cup)
*266 g heavy cream (1 1/2 cups)
*60 g egg yolks (3 eggs approx.)
*38 g brown sugar (1/4 cup)
*1 tsp vanilla paste or extract

My challenge is always controlling temperature and timing to ensure the dough and the butter are of similar consistency. If the butter's too hard, it pokes through. If the butter's too soft, it spluffs out. Any advice?
Press the dough into roughly the right size and shape on a parchment or plastic lined sheet, cover and keep the dough in the fridge while you make the butter packet, it can take a while. Then cool the butter packet in the freezer not too long but until hard, take out and warm the butter packet between your hands until it is just flexible enough to bend slightly without breaking, set it down, take the dough out of the fridge put it on your floured surface, flour your pin and roll slightly to soften, and the butter and dough should be perfect temp together

Such a great recipe, huge success I wish I could add a photo.
You know what the problem with these videos is? They want to tell you how delicious, how fancy and especially how easy it is to make. Yet what they don't tell you is that just to get the dough ready, to fold the butter successful in three turns, takes tremendous amount of practice. And the success rate is very low to amateurs because not only it depends on the skill of the baker but also on the amount of fat in the type of butter and temperature when the dough is soft but still manageable to fold. This dough is the same used in a croissant. But no, they wouldn't tell you, until you fail and fail and fail and you just gave up and buy instead. Simply half this video can be ignored unless you are an experienced baker and just buy store made dough.
I agree and disagree. Making puff pastry is difficult but with practice, it can be done. So, don't run out and buy the frozen stuff. Keep trying. its worth the effort.

Look up "rough puff" pastry. 😊 That's about as close as you can get without all of the layering!
