Crispy Fried Chicken Wings Recipe
Ingredients:
- 2 pounds chicken wings, separated into drumettes and flats
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional, for extra heat)
- 1 cup buttermilk
- Vegetable oil, for frying
- Rinse the chicken wings under cold water and pat them dry with paper towels.
2. **Marinating the Wings:**
- In a large bowl, mix the chicken wings with the buttermilk. Ensure all wings are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
3. **Preparing the Coating:**
- In another large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using). Mix well.
4. **Coating the Wings:**
- Remove the chicken wings from the buttermilk, allowing any excess to drip off.
- Dredge each wing in the flour mixture, ensuring they are fully coated. Shake off any excess flour and place the wings on a baking sheet or plate.
5. **Heating the Oil:**
- In a large, deep skillet or Dutch oven, pour in vegetable oil to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C). Use a deep-fry thermometer to maintain a consistent temperature.
6. **Frying the Wings:**
- Working in batches, carefully add the coated wings to the hot oil, making sure not to overcrowd the pan. Fry for about 8-10 minutes, turning occasionally, until the wings are golden brown and crispy.
- Use a slotted spoon or tongs to remove the wings from the oil, and place them on a wire rack set over a baking sheet to drain excess oil.
7. **Serving:**
- Allow the fried wings to rest for a few minutes to cool slightly and crisp up further. Serve hot with your favorite dipping sauces, such as ranch, blue cheese, or a spicy buffalo sauce.
### Tips:
- For extra crispiness, double-dip the wings by dipping them back into the buttermilk and flour mixture before frying.
- If you prefer baked wings, preheat your oven to 400°F (200°C) and bake the coated wings on a wire rack set over a baking sheet for 45-50 minutes, flipping halfway through.
