Here we talk about the ins and out of sharpening. From beginner information to more advanced sharpening. Everything sharpening. My name is Scott Gunn. I have sharpened for over 30 years. Hopefully over a lifetime of sharpening I have picked up some information along the way that helps you. I have been teaching people to sharpen or help them troubleshoot issues over the internet for years. I have been asked for a longtime to do a UA-cam channel and share the information that I give them. So here we are. I’m just looking to help as many people as I can. Look for the tech tips. Tech tips are short videos giving quick technical tips so you don’t have to watch a longer video just to find that one tip that you have been searching for. We’re in the beginning stages and the videos are raw right now. My 13 year old daughter is my producer so to speak. We’re hoping to grow in this together. My goal is to provide something for sharpeners at all levels.

I happen to get an extremely low BESS score. That doesn’t make me amazing it makes me old. I have been doing this sharpening thing for a longtime. I was doing a lot of sharpening and happen to really be in the zone on this one. This is a follow up to a video I posted on FB.

Man I wanna ask you is it bad to sharp the blade on a wheel machine like Tormek but on very high speed.Does something happens to the blade?
my bevel on one side is larger than on the other side , but all the way ... same eather for my combat knife than my kitchen knife . Both new knifes that i sharp with my new fix blade sharpening tool ( gen3 xarlik ) i give same amount of storke on each side , and my degree adjustement seems to hold when i flip , so i need to go back coarse and work only the thin side until my bevel go larger ?

I bought some 1 micron and was amazed how good your product works. I intend to buy a variety from you soon. Has anyone used an edge-on-up Bess sharpness tester after using the juice but. I have gotten knives so I can shave with them with this product. My kudos to you.

So seeing this is a older video I'm assuming you have plenty of experience. I'm new to resin bonded diamond stones and just got some venev orion resin bonded diamond stones... f-80 to f-1500 what powder type and grit would you recommend for conditioning and flattening them? THANKS FOR ANY OF YOUR HELP
@@eddiekytia I usually try to work up close to the grit of the stone. As an example I usually would go to an F-1500 I would go to a F-800-1000 with SiC powder I have by #Hapstone that I purchased from #gritomatic
One thing that I kept doing was while the handle is on the left side, I would subconsciously lift the handle up slight to avoid it hitting the frame of the grinder and ended up seeing a wear pattern like a mini recurve. Finally got good at not doing that and the the MK2 comes out where there is no frame to hit against on either side.
Just got a pm 2 but im a lefty so not really any options on the pm for left hand. Mine is s45vn so happy about that. No fancy scales. Just black g10. Not much love for the lefty model. But at lest i can use it. Cant decide if i like the pm2 or manix 2 more. My manix 2 is like butter smooth. Opens so smoothly and closes very easy, took around 2000 open and closeing cycles. Pm is nicer in the hand but manix fits good to. Pm is lighter and has smaller profile. But manix feels stronger, like it can take alot more hard use. Just cant decide. Manix is in s35 . Both are great steels. Easy to sharpen by hand, cant really tell a difference on that point.
@@outdoorsythings2573 it’s a toss up between the PM2 and the Manix for me. If I was a lefty I’d probably choose the Manix 2

@@ameerkamil59 my manufacturer had a warehouse destroyed in hurricane Helena. I am waiting to hear when I can expect new product. They’re working on rerouting and filling back orders. I wish I had a better answer for you

I was under the impression that the Jende Nano cloth strops weren't ACTUALLy rated for a micron size, and it was just to help keep them matched to the emulsion... Example, the 0.5 Micron Nano cloth strop was the EXACT same as the 1 micron cloth, but the color of it helped you determine what emulsion you put on as typically you'd load it with the corresponding color emulsion.... but the only difference between the 0.5 and 1 micron Nano strops was simply color. As far as the drag as you use them, that is for sure. I have a Jende Nano cloth strop in 0.5, and it's my absolute favorite, and that feedback / feel is one of my favorite things. I do plan on giving your stuff a try though, I have heard nothing but good about it. I like to go deep and get "all the products" so to speak, so I will be getting your stuff soon. It's been long enough, it's time I try it! lol

And honestly I forgot all about it until I read your comment. So yes I probably should correct that on screen in the video instead of just the description
I won’t carry a knife with a messed up secondary bevel like this. Looks ridiculous. I can sharpen a knife for years and my cutting bevel will never look like this. It needs to look tight and crisp
@@KaGeN102 that’s the factory angle on it so take that up with Spyderco. Evidently you missed that part of the video. But please by all means make sharpening videos and show us how it’s done. I would love to see what kind of work you do. The industry needs more quality sharpening videos
I would have kept the secondary bevel the same size it was before. This bigger secondary bevel looks terrible now on this small blade
@@KaGeN102 the secondary bevel was like that when I received it. I followed the angle already there. Again please make videos and show us all how it’s done.
I'm new to gunny juice and absolutely love it but I bought a 10ml and 1/2 was wasted on my floor.... I was pumping pumping pumping with nothing coming out then the top got stuck so when I pulled it off that shit came out EVERYWHERE. I WAS SO DISAPPOINTED but when I got to use the little left..... I fell in love! With that said I haven't bought another bottle since. For the money I'm scared of getting the same result with it not pumping right... I'm also on a fixed income.... none the less....... AMAZING STUFF

Hey, Scott - Wonder if I might ask a question: I'm about to try and reprofile a hand-forged "Coolina" knife that has a large belly on my KO-3. How should I clamp this up; stay with your usual "Tip parallel" or pointing in the same direction as the corner of the clamps, and equal distances from center, etc.? Any suggestions appreciated. I don't have alot of experience yet with my TSPROF and I've never attempted a blade with such a large "Belly." My friend who owns it wants it more "Slicey" instead of a more convex edge - and so I plan to start out with the Atoma No. 140 and then work through the usual progression of abrasive stones. Sure have learned alot from your channel, thanks again...

@@johndenver5029 the 3 micron I think you will like as an all around compound. You will get a very sharp edge of the F600 or a 3k-6k stone
@GunnysSharptalk I just got the venev double sided 3pk. I have I think f180-f1200 and this fepa grit unit is new to me. Where would you stop stone wise w maxamet?
@@johndenver5029 anywhere from the F400-f1200 have performed well for me. For a lot of people stopping at the F400-F800 are good. What type of material do you most often cut?

There is no doubt you know how to make some nice edges, but I do find that theres quite a few statements being made here that is scientifically unsubstantiated, such as polycrystalline doing a "much better" job than mono where all data ive seen indicates that this is not true as the fracturing doesnt really affect the blade and what really matters is concentration. Or that thing with diamond compound getting in between serrations and sharpening there, which I have not seen at all but I have seen the oposite. But hey both are functionally true I guess, buying better compound absolutely does a better job and using a strop correctly gives a vastly superior edge! Good video though, I just have a feeling some gaps are being filled in here and there.
@@kvernesdotten I appreciate your feedback. However, polycrystalline diamonds have proven to remove stock and polish more efficiently in suspensions due to the spherical shape and larger number of cutting facets
@@GunnysSharptalk I see, do you have a source on that? These claims I know to be true in industrial applications, but according to the ScienceOfSharp website as well as Dr Ion Beneas paper on the topic, along with numerous people testing it anecdotally and posting their results, this is only true when significant mechanical stress is introduced. Far, far more than what we apply when stropping a knife, we are talking industrial lapping machines and such here. I know im sounding like an ass right now, and I will admit that im not an expert on this topic at all. The topic does however interest me enough that ive read quite a bit on it, mainly triggered by me trying both poly and mono after being told poly is superior, and really not finding any difference in result. I did more testing, and came to the conclusion that buying good quality compound with a high concentration of good quality diamonds in it is absolutely worth it (like the gunny juice), but as far as poly being superior I just cant say ive found that to be true. And all the data Ive found on it says it is true in some applications, but stropping a knife is not one of them. Especially not on leather, a soft surface. Im more than willing to learn more about this if theres something ive overlooked here, but as long as my experience 100% lines up with the data, im having a bit hard time believing in it tbh
@@kvernesdotten I’m not as concerned about the fracturing honestly as I am about polishing, speed of stock removal and edge quality. Polycrystalline diamonds have a more rounded uniform shape that’s shown to remove stock more aggressively as in stropping. Mono crystalline diamonds I prefer to be fixed and not roll around. Like for stones and such. I am out and about and on my phone so I didn’t dig very deep for you. Maybe we can continue this discussion by phone, messenger or email when I am in a better position to help you with the information that you are looking for. Again I am not bothered by questions and I appreciate you bringing questions to me. I replied now instead of a later time because I didn’t want you to feel like I was ignoring you or unwilling to engage in a conversation asking for clarification on the science.
Like you said, the only time I use my really low grit stones is when I have to do a lot of profiling, such as on a new knife with a bad grind or the like, and if I want to use a really low grit stone (80-100) I won't even sharpen right to the edge with it. I will only come say halfway down the bevel then switch to a higher grit stone for that last little bit. Doing this I have not personally had a problem with chippy edges.
Did you ever manage to fix that screw in the clamp so you can zero it? Last time I had a stripped one I used a file to cut a slot and used a screwdriver to remove it.

What about the different types of leather? Shell cordovan vs cowhide, sheep, kangaroo, full grain, top grain, etc.
@@morehn shell cordovan doesn’t do well with most compounds. The leather is too slick and tight grained. It works well with every leather I have tried. Unless the leather has a lot of wax or oil on it. Then the product doesn’t want to stick to it. Cowhide works great to around 1 micron. Below that I usually prefer kangaroo or something with small pores
@@GunnysSharptalk what would happen if you don't use any compound? And if you want a perfectly smooth edge, does compound create teeth?
@@morehn every scratch pattern creates teeth. The less you can see scratches the smaller the teeth. If you magnify an edge enough and they all create teeth. Not using compound you can remove a burr, but you won’t really refine the edge any further
@@morehn so not using compound whatever micro serrations the last stone creates will be the micro serrations that will be on the final edge

Does anyone know the difference between gunny juice and jende diamond emulsion?
@@tomcat5284 Jende is more oil based and Gunny Juice is a water base. Also Gunny Juice has a higher diamond concentration and also the diamonds of GJ will not clump together forming a larger abrasive particle. So it doesn’t cause large scratches
Interesting perspective friend! Are you saying stropping compound fills the microscopic voids in the grain of the knife edge? And when preparing Sushi, will this compound eventually contaminate your food? 💯✌️🦚
@@billybudz the compound rolls around loosely in between the microscopic serrations in the edge. No just wash/wipe the blade off. The compound doesn’t stay on the steel permanently. A lot of times you can see the dust on the edge. I rinse/wipe a blade off even if I use a ceramic for a touch up because microscopic bits of steel are removed. So I clean the blade to insure there’s not any foreign or loose material on my blade

Produce the type of videos you like. We would all appreciate other people making a contribution to the sharpening community. I’m just sharing information. I don’t edit videos. It’s a one and done. Some people appreciate the information and products and some may not. Not your cup of tea no worries. I will continue to share information. Someone might get something from them on occasion. Do you generally sharpen the belly or tip first on a Tanto?
@@LiquidRetro personally I tend to do the belly first then the tip, but the way I clamp I go back and forth between them. So I sharpen on side both belly and tip then flip it and so on

Always nice to see people give credit but like you said, this is the internet so it doesn't always happen unfortunately. I love your videos, "low production" and all. You don't need crazy lighting or special effects to give out tips and advice. You are always responsive in your comments to anybody that has a comment or question which is great and always appreciated. I have seen some larger channels that just pump out content and never interact, or they can't answer questions because they just regurgitate something they have seen and if that info is wrong then they just ignore the people giving them the correct info and push out their next video without ever making corrections.

I couldn't agree more with you! It's very cool how Scott is always willing to help us out & be responsive. His "Gunny Juice" also is the gold standard in the sharpening world when it comes to the diamond emulsions...

This is the first time I’ve heard someone say to not just lay the knife flat but to move it so the bevel’s flat. I’ll have to try that
Hey brother, man, you’re great. I’ve been watching you recently newly discovered you. I just bought some of your gunny juice. For any of the super steals because of the hardness and the carbide is diamond compound a must?
Thank you! Sorry cor the delayed response. Sometimes these get buried with other videos in my feed. For high Vanadium carbide steels only diamond and CBN will actually cut the vanadium carbides. Now if you don’t go down to 3.5 micron or less it doesn’t matter as much. You do get better bite with diamonds or CBN on any steel though
