    Thanks for the information! I don't want limp leaves of any kind, so raw appeals to me. Your tips on how to prepare it are awesome! I may try sauteing for about 30 seconds sometime.

    I’m wondering if this would be a good choice for me as a diabetic? I am trying to mostly follow a keto diet, with the exception of all the meat. In other words, I have tried to cut out white flour, sugar, carbs, etc. I have always leaned towards a vegetarian diet. I grew up eating a lot of Loma Linda and Worthington vegetarian meat substitutes, so I prefer that to actual animal meat. I’m just curious for your opinion on this for people with type 2 diabetes. Thank you

    Thank you for this video! I was looking for something that can help me understand how the Wic is. I'm a Dietitian, not a RD yet and I have to start. I'm from Brazil so it's not too easy get a job in another country. I heard about Wic and how I can be useful speaking Portuguese and Spanish supporting families from another cultures. My interview is in this week. Exciting and I hope to be able for any position.

    Unfortunately nowadays since the requirements of jobs are becoming more expected many WIC programs require you to be a RD with a masters education and depending which you are applying to with experience as well

      it's true - I know some programs that do have nutritionists on staff rather than just dietitians, and because the pay is low, many RDs with Master's degrees will look for other work, but I'm sure it depends on the area you live in whether there is competition for these jobs, in which case, hiring standards go up, even though you don't really need a Masters degree to be able to do the work involved.

    I think chickpeas would be a good idea…or creating a savory smoothie with some of those unexpected ingredients like tofu and adding herbs like basil for flavor and can be kinda a smoothie or a gazpacho

    Lorelei, would you please explain if tempeh is nutritionally better than just soy?

      Hi Maya, will try to do a video to answer the question. Short answer, both can be good for you. Tempeh is soy, of course, but fermentation probably makes it more digestible that plain soy beans. Tofu is also relatively digestible (compared to plain cooked soy bens), but has the fiber removed.

    Thank you for sharing this video! I am an RDN, but have not practiced for 10 years to take time to raise my family. I worked clinical and outpatient for 10 years. I am exploring entry-level options to ease back into the field. I would like to brush up on some of my skills before I take this step. What skills did you find most helpful or would you recommend I focus on if a position like this is a goal for me? As I continually search for CEUs, I would love to be working toward this goal. Thank you for any help you can provide!

      Hi Betsy, sorry for my delayed reply. If you are interested in working with WIC, and are an RDN, you've definitely got the background - most WIC positions are entry level and would be great for easing back in. If you're looking for continuing education, anything related to community nutrition, maternal nutrition, or early childhood nutrition would be very aligned with working with WIC.

    Thank you for this clearly presented video about quinoa. Quinoa is so light and fresh but so addictive to me. I am surprised that there aren't more ways it's prepared. How do they eat it in Peru and Bolivia? I am going to make a quinoa salad now. Yum!

    Thanks for the ideas. I bought some kale recently and ate it for the first time straight,, just washed it and ate it! It was sort of like eating dried out old crepe paper? 😫 I figured there must be better ways so I'm hitting the interwebs for advice! 😅
