My name is Margaret. I Was born and raised in the little peaceful city of Calabar. Then I moved to England with my family in my mid-teens.
I love to cook and bake. My recipes are a combination of the amazing traditional Calabar meals that I grew up to love in my early teens, living with my Grandma, as well as the delightful English recipes which I've grown to love for about 20 years now, living and growing my young family here in England.

Christmas Cake | How to make a CHRISTMAS Cake with Dark Rum | Megshaw's Kitchen
How to make a CHRISTMAS Cake with Dark Rum.
In today's video, I'll be showing you my easy method of how to make a super delicious and moist Christmas Cake using Dark Rum.
Ingredients:
First step:
Soak some Raisins, Cranberries & Glace Cherries in Dark Rum and a bit of apple juice.
Allow this to soak for at least 2 days or up to a week for maximum Rum Taste.
Second step:
Add the Rum-Soaked fruits to your mixing bowl
100g of melted butter (unsalted)
1 tbsp trickle
100g of light brown sugar
1 tsp ground nutmeg
1 tsp ground ginger
1/2 tsp ground cloves
2 large eggs
280g self-raising flour
1/2 tsp baking soda
Orange Zest (zest from 1 whole orange)
Bake this at 165c for a total of 1hour & 20 minutes.
after the first 40 minutes in the oven, cover the top of the cake with foil to prevent it from burning.
Once the cake is ready, use a toothpick to poke a few holes in the cake and feed it with a few drops of Dark Rum. Store it covered with foil to preserve it until you're ready to serve this on Christmas Day.

Yes you definitely can, just make sure to add the pecans on the same day you’re ready to bake. As they are nuts, no need to get them soggy.
Thank you so much for the recipe. I want to try it but i just want to verify if the flour you used was self raising or all purpose flour and also to check how many inches this cake is so that i know how to cut down or to increase the ingredients depending on how small or how big it is
Hi Yolander, I used self-raising flour to make this Christmas cake. Also, this was a very large cake and is about 3 to 4 inches deep which is why I used a parchment paper to extend the height for more depth. Feel free to adjust quantity as it suits your needs. Thanks for the feedback 💕

Absolutely. I use mixed spice to bake flavourful cakes and breads, and also use it for cooking food / meats. It’s one of my favourite spice combination. 💕💕
