What you said about butter is actually the opposite. Oil is 100%fat. Butter is about 80% fat 18-19% water and 1-2% milk solids(proteins, minerals, carbs) When you make butter, all of these are dispersed throughout the butter but when you melt it, they separate. When you make clarified butter, you're removing the water and milk solids so that you are left with pure oil (close to pure anyway, there are probably still like 0.1% minerals and such). This is why clarified butter has a much higher smoke point than regular butter. The milk solids burn at a relatively low temperature but when they've been removed, the smoke point is higher. When you melt butter that foamy stuff is the milk solids. That's the part that turns brown and gritty if you cook it too hot or too long.

i think you did the first cleanining and seasoning very good and that was the reason I had the patience to watch about all the 3 parts. Thanks. With my experiemce the surface of any carbon steel pans will not be non-stick enough until you make stove top seasonings. My rule is you do x2 seasonings atleast on the stove top after you have done your first rust protection seasoning. I would suggest do a part 4 this way: clean the pan well. Apply a very thin canola oil layer. Season on stove to 2 times atleast for a 5-15 mintes depending on heat (use medium up to 3/4 heat). When cooking an egg: heat pan on medium heat for 5 minutes so its hot enough. Turn heat to1/3. Wait a minute and crack the egg. Let the egg whites get all white before you try to move the egg. Please let me know if you tried and if i could advise.

It's not bad but not perfect. The ideal scenario would be two separate arms to perfectly adjust, but I'm finding the handle to move both monitors up and down when i go from sit to stand an awesome feature. Hi! It's a good video and a wonderful learning moment. Congratulations with your new pan! If your pan isn't rusting, the seasoning is good enough. However, for non stick cooking surface, what you do befor cracking the egg and during cooking it is what matters most. Once you understand what makes cooking surfaces non stick, you'll know what to do every time before you cook and your food will never stick on any pan with any oil or fat or any amount of oil or fat, just like with teflon. The trick is to achieve the spot seasoning effect of having a thin layer of freshly oxidized oil or fat on contact with the cooking surface and a layer of liquid oil or fat on top of it. Both layers of dried fat and liquid fat on top can be extremely thin, less that what you added to your pan for cooking the egg. If you watch Chinese chefs cooking in carbon steel woks they do it in seconds by preheating carbon steel to high temp, then adding a splash of oil which immediately smokes upon contacting scorching hot wok surface, and discarding that oil. Then they immediately add fresh oil for actual cooking and adding an egg, for example, to fry a crispy fried egg or an omelette or scrambled egg for fried rice, etc. And nothing ever sticks. Home cooks do not have access to such high heat, so our first preheating and seasoning with the first fat would take a bit longer, but the principle of "two oils" or "wet surface" ("wet" from a bit of liquid oil on top of oxidized at high temp oil) is the same. So, please wash your pan as is with boiling water and a green Scotch Brite pad (scrub very , VERY lightly), and do such stovetop seasoning before you crack your egg and cook it to perfection. One example of stovetop seasoning is here: m.ua-cam.com/video/e8G2GrQW3fA/v-deo.html . Also, please read this article about principles of seasoning metallic cookware that tends to rust (cast iron or carbon steel) or enameled cast iron and aluminum skillets to which food tends to stick without such "spot seasoning" that leaves the surface perfectly non stick. genuineideas.com/ArticlesIndex/castironseasoning.html Spot seasoning by one oil or fat, i.e. when we use one oil to preheat it to smoking and then fry in it or on it is shown below by another professor who likes to cook: once your oil is hot enough to reach its smoking point it only takes 10-15seconds for the spot seasoning to happen and your skillet to become perfectly non stick. Then let your skillet reach the desired temperature for coking (for it to cool down or to heat up) and add egg, tofu, fish, or pancake batter, nothing will stick! m.ua-cam.com/video/5_4-mwJBSS8/v-deo.html Good luck!

With the discount on shipping through ebay it's the cheapest way to ship to the states, the insurance can and will jack up the shipping cost. I fully insure and require signature with all purchases, no porch pirates that way. And with fedex economy the package is usually delivered in 3 days. I've heard about the scam buyers and from what I've read you have to file a fraud claim with your local police and then eBay will not fuck around with you. Now I've had to deal with shitty sellers who claim never read books or perfect slabs, only to get books that look like a 10 year old dragged it down the street before lighting it on fire. I just had a book show up yesterday "perfect condition" except for the piece of broken slab wedge back in place to make it almost impossible to notice on their ad photo. Thankfully they just refunded me my money and no return(it was a cheap book). Now I'm going to just send it to CGC to get a reholder. Oh lol I also check shipping prices for Canada shipping between eBay and shippo. Sometimes shippo is cheaper with add on insurance available. They used to be the shipping portal on ebay way back when lol.

Although avocado oil is a much healthier alternative and has a nice high smoke point, its fibrous nature is not conducive to being used on iron pans (carbon steel and cast iron).
