FROSTING INGREDIENTS:
250g Cream Cheese
1/2 cup white granulated sugar
1 tsp vanilla extract
1/2 tsp strawberry essence (optional)
1/4 tsp red food colour (optional)
500ml Thickened/Whipping Cream
2 punnets strawberries

This is the frosting I use for my Ube Macapuno cake. I just modify it and add flavour when I use it for my other cakes, like Mango Cake and Strawberry Cake. It’s very easy to make and so yummy, not too sweet!

    Is thickened cream same as double cream pls? Also is it better to use thickened cream or whipping cream?

      Hi, yes it is somewhat the same but the double cream is a bit thicker. You can use either thickened cream or whipping cream, whichever you prefer.

      Hi, di ko pa natry mag-add ng color pero pwede siguro. To be sure hindi maapektuhan yung consistency ng frosting, try to add color sa isang small portion lang, like in a small bowl, and wait a few minutes. If okay pa rin ang consistency or hindi nagcurdle, then it must be okay. Again, I have not done this, but if I am going to do it, this is how I would do it. Let me know how you go. 😊

    I just tried both recipes today but with a different dairy free butter (couldn't find the brand on the original recipe) and it is soooo good! The chocolate cake has to be my new favorite chocolate cake! So moist and yummy! Thanks for posting this!! ❤

      You can use any nondairy butter available in your area, but I used Nuttelex as it is my only option here that actually tastes like butter. Thanks so much for your feedback! I’m so happy it worked out great for you! 🥰😘

      Yes, para hindi malusaw or magtubig yung cream, lalo na kung mainit ang panahon. Pero kung malamig sa loob ng bahay pwede na hindi iref. Pero kung malamig naman na yung cake, pwede mo na ipahid direcho yung frosting.

      Try mo sya iroll habang medyo mainit pa, yung ok na ihandle nang hindi ka mapapaso, saka wag masyado mahigpit ang pagroll. Then iref mo and do the frosting. Wag masyado matagal sa ref. Enough time lang to cool the cake. Ok lang medyo magcrack when you unroll kasi the buttercream will “glue” the cake together.

      Bake for 30mins then do a skewer test. If cake is still wet, bake for another 5mins.

      @@iammylenef Siguro check your cake first if the top is still soft. If it still wobbles the don’t test yet, malamang di pa luto. Wait a few minutes more. I have not baked this on a 7” pan so I am just going by what I would probably do.

      Hi, I haven’t used halaya with this cake kaya di ko masabi how much sugar you’ll put in. I would try omitting the sugar in the cake and just keep the usual amount of sugar in the meringue. But you have to do a trial-and-error here as I have not tried it myself 😄🤞🏻.

      @@miasclassicandcustomcakes hi! I just finished baking my cake and i am waiting for them to cool down. I have read in a post (i forgot already where) to substitute the grated ube to equal parts of AP flour. I just added half a tbsp of ube extract and it turned out great! I qm making this for my mom's birthday tomorrow as a surprise! She loves ube macapuno cake and I hope she likes this one! P.S. I have asked everywhere and ube is just not in season right now

    Hi po hindi po ba nagkakaroon ng discoloration ung top after malagyan ng macapuno, meron na kasi akong na encounter na ganon ube macapuno pero nag kulay green ung ibabaw idk kung bakit.

      Hi, yes nangyari din sakin yan isang beses nung kinulayan ko yung frosting ko ng violet food colour. Kaya I never colour my whipped cream/cream cheese frosting. White lang sya then yung ube cake crumbs.

      Hello po, you may put ube flavouring on the frosting but bec of the cake crumbs on the side, hindi na rin makikita yung kulay ng frosting. I also like the contrast of the cream frosting with the ube cake crumbs outside the cake. So it really depends on your preference. 😁☺️

      Hi, sorry I’m not sure kung pwede kasi di ko pa sya natry. Maybe try whipping cream with clear gelatin. It wouldn’t taste the same pero mas stable kesa whippit. Pero di ko pa rin natry yun, I just watched videos dito sa UA-cam about stabilized cream frosting. But et me know kung matry mo. 😊

It wouldn’t taste the same pero mas stable kesa whippit. Pero di ko pa rin natry yun, I just watched videos dito sa UA-cam about stabilized cream frosting. But et me know kung matry mo. 😊

      Hi, I used two 8” round pans in this video but I only decorated one. Medyo puno bawat pan. You can also bake this in two 9” pans or one 10” round or square pan. Pareho lang ang baking time.

      Hi, it might go soggy because the frosting is whipped cream and cream cheese. If you want to put edible cake topper i suggest you frost the top of the cake with vanilla buttercream instead. Let me know how it goes. Take care!

      Hi, yes I think you can. Just make sure to pour the condensed milk in gradually so you don’t make the frosting overly sweet. Add in a little salt just in case it gets too sweet. Let me know how it goes. ☺️👍🏼

      Hi, you can store it in the fridge up to one week from date of making the frosting. This is because both the thickened cream and cream cheese easily spoils and could develop molds in it.

    Can I use condense milk instead OF sugar?

      Hi, thanks for asking! Sorry I haven’t tried using condensed milk so I cannot be sure if you will get the same stabilised consistency. But in my opinion condensed milk is quite sweet and because it is too thick it might weigh down the whipped cream. But if you try it and it works, please do let me know 😊. Stay well!
