    Yes , get that small rear wheel off the fender , they can have an annoying little rattle 😊 . .

    I think most people, myself included, take the rear wheel off the fender. That leaves only a single attachment and the normal bolt then fits fine without any real compromise. You'd then get that reflector on.

      Yes thats a nice easy solution. Im going to try and keep the wheel on by filing a few mm off the bottom of the reflector so its there as backup when we are traveling. It's not much to file off I think.... time will tell :)

    why don't you just microwave it to melt it?

      We don't have a microwave, it's really nice and easy and safe in bowl of water, you can just leave it and not worry. It has a melt point of about 65c, once you get too much higher (85+) it starts to discolour. 200C is about the flash point, you don't want to get close to that. Be safe.

    Thank yoou for the test, may I ask at what temp. you made the test? I am making strter from ryeb flour and even next day no activity ? I I am trying ti figure it out why . Tank you !

      Hi, really good question. It was 24c in our kitchen that day, so id say it takes about 5hrs at that temp. When I do it overnight our kitchen is about 18c and that will take 9 to 10 hours. You will also find the flavour will change, low and slow will give you a stronger sourdough taste. Hope that helps :)

      Yes, always wood for us, way better for your health and the planet. We had a friend who left their plastic chopping board in the oven then heated the oven up..... disaster for her, molten plastic everywhere.

    Thanks fpr sharing. I searched many times in years of how to bake 2 sourdough bread at a time. My oven is not big enough for 2 dutch oven. I am still trial and errors. I added one baking stone at the bottom, meanwhile the dutch oven at the top. Trying to use the rack or steel layer to the support the dutch oven and stone to see the difference. Good luck.       It takes a few goes to get the hang of doing two at a time. I would love a bigger oven, but we just don't have space for one. Enjoy your baking :)

    Hi, great video, just want to clarify; near the end of baking you said total 40 minutes but first baking at 230C 20' plus 210C 30' so that would be 50', not 40'

      Thank you, good to clarify, I find 20mins at 230 and 20mins at 210c will give you a light bake (still cooked) but I do sometime go and extra 5 to 10 mins for a darker crust. Hope that helps. I would check at 40 mins and see if it's the colour of your liking. Enjoy :)

    Please make an 80 % whole grain. I made one last night, and it was good, but I wish I had used more whole wheat flour. I ground my own wheat berries! 😊

      yes, but you will need to create some steam so that it rises. Ice cubes on a hot tray work.

    Perhaps the 8 minute hands on total is due to experience and practice. Those of us less used to stretch and fold, shaping and other processes will take much longer. Compare to Ben Starr's current 10 minute method, which is truly easier and less hands on 10:58 (but less traditional in method).

    Just came across your video. Have made a few loaves 50/50 recently. Apart from the rye flakes and lower 220 deg temp as cannot go any higher, I make it the same way now. I tried lower hydration b4 but it would tear more. The last 4 loaves came out almost perfect with 75% hydration and I am glad you confirmed my understanding of my experiments. You made a perfect, yummy loaf! Thank you for sharing! 😊

      I need to pencil in a time to do a scolding technique for high percentages of Rye flour, it works really well and keeps the loaf light.

If perhaps you discover a Challenger bread pan with the old design handles (situated high up on the dome at angles), please let me know. (The change in design they made seems LESS convenient. Also the new version is two pounds lighter weight, which probably doesn't help heat retention etc. The original version is better I believe.)
