Breakfast: Makes 4 servings
Calories Per 210g baked oats & 1 cup unsweetened soy milk
Calories 603, Protein: 43g, Carbs: 64g, Fat: 21g
2 cups GF rolled oats
5 scoops of Sprout living Vanilla protein powder (Save 20% off using my code)
1.5 cup unsweetened soy milk
1/4 cup maple syrup (adjust per taste)
1/3 (100ml) cup unsweetened apple sauce
1 tsp baking powder
1 tbsp ground flax seeds
pinch of salt
1/4 cup chopped raw walnuts
1 tsp cinnamon
1 tsp vanilla extract
Mix everything in a baking dish. Bake at 375F for 20-25 minutes.
For Topping:
30g powdered peanut butter mixed in water.
Once baked oats have cooled down, drizzle PB on top and serve.
Lunch: Recipe makes 2 servings
Calories per 465g Tofu with onion/bell pepper, 2 slices of bread
Calories:604, Protein: 42g, Carbs: 53g, Fat: 25g
1 block 350g extra firm tofu pressed, 1/2 tsp garlic powder, 1.5 tsp corn starch. Air fry for 10 minutes.
2 large size onion thinly sliced
1 red bell pepper
Naked & Saucy Sweet Garlic Sauce (4 tbsp)
1 tbsp coconut secrets Teriyaki sauce (optional)
2 tbsp water to dilute sauce
salt per taste
7-8 sprays of Avo oil to help caramelize onion. Use a good non-stick pan so you don't have to use lot of oil. Feel free to add extra veggies on the side for more food volume.
Dessert/Snack:
calories for 1 apple donut (65g) serving:
Calories: 117, Protein 2g, Carbs: 23g, Fat: 4g
2 apples
160g medjool dates
70g dark chocolate
2 tbsp almond butter (2 tbsp water) to help with blending dates and almond butter.
Spread date caramel evenly on all sliced apples. Sprinkle some sea salt. Freeze for 1-2 hours. After 1-2 hours, remove from freezer. Melt dark choc in microwave and dunk each slice in dark choc one by one. Transfer back to freezer for 1 hour. Enjoy. Refrigerate the the rest in a plastic container in the freezer.
Fettuccine makes 4 servings
Calories per 400g serving:
Calories: 479, Protein: 45g, Carbs:34g, Fat:18g
200g dry soybean fettuccine (cooked/drained/rinsed)
1 extra firm tofu crumbled, season with salt, garlic powder. Air fry for 10 minutes at 400F.
2 large leeks
8 cloves of minced garlic
2 tsp extra virgin olive oil to sauté leeks in
2 tsp vegetable bouillon mixed in 1 cup hot water
For Sauce:
1 block of soft silken tofu.
zest of a lemon
juice of 1 lemon
1-2 tsp maple syrup
salt per taste
1/4 cup nutritional yeast
Blend sauce ingredients in a blender. Keep aside. Once leeks have cooked down. Add veggie broth, air fried tofu, cooked fettucine and pour sauce on top. Incorporate everything nicely and serve.

@2:40 Preeeeach sis!! I have swole goals not just for aesthetics but because I saw all my elders lose strength and independence. I’m only in my 30s so I have plenty of time to prevent that for myself. Also ladies there’s nothing more exciting and empowering than seeing yourself get more muscle! The first time I saw my triceps definition I was like whoa!! 😂
I have the same relationship with Peanut Butter. You say the oats gives you 4 servings but it looks like you cut 6 servings?
Haha..I can see how that may look confusing. I cut 6 slices just for presentation/plating for my videos. I usually go back and divide 4 portions equally.😃

Glad to hear you liked these meals. I don't think freezing caramelized onion and tofu would taste good in my opinion. I haven't tried it though so you can give it a shot but I doubt its going to taste as good once re-heated. This lunch only makes 2 servings. You can just save leftover for the next day in the fridge.

I’m definitely giving these recipes a try for my next meal prep. I just have to figure out a good sauce replacement for the caramelized tofu since it’s not sold on amazon and I’m in the US.
I am happy to hear you're going to be trying out these meals. I believe you should be able to find coconut secrets/Teriyaki sauce in US. If not any other low calorie sauce with similar ingredients will work :)

I just want to say thank you. Your meals are easy, healthy and inspirational. I am not vegan, but I believe in incorporating variety in my diet. I will have a yogurt bowl for breakfast and then your wheat gluten rolls with butternut squash and bean soup for lunch. Meal planning is a must for a healthy lifestyle. I am a true believer in that. If you are not organized, you are going to do something you are going to regret. I know from experience. Where do your ideas come from? I encourage you to keep up the good work!!! I will be watching.

To be honest, coming up with different meal ideas for my channel does take bit of mental effort on my part. I just start cooking and recording. If the meal turns out tasty, I share it on my channel. If it doesn’t I delete the footage & re-try 😊. Behind the scenes I repeat lot of my meals daily to stay consistent and keep it easy for me! 😅I don't mind eating same meals on repeat :) Like you said, planning is the key to sticking to a healthy lifestyle and maintaining your fitness results.

Sure! It's super simple. Key is Unsweetened "Eden's soy milk". It froths really well. I froth my milk first, then I add my espresso shot in there. Easy :)

This is true and happened to me. I lost muscle mass while losing weight. However, I am gaining it all back and more and much more stronger now with weight training and HITT. Thanks for the encouragement. Muscle knows no age 😊

Girl, if you have two kids, a full-time job, a husband, you train people in the evenings, and you create these videos...I don't think using chopped vegetables means that you're lazy, LOL. You're just trying to be as efficient as you can with the little time you have.

I'm definitely going to try your chickpea blondies, but I think I'm going to use xylitol instead of the maple syrup and coconut sugar, because I have to be very careful about my blood sugar. I'm crossing my fingers that they will turn out well. I hear you that baked goods are your weakness and you usually prefer single-serving desserts. Same here. But, these might be worth a try, anyway.

OMG that pumpkin oatmeal looks amazing!! I wish I could have pumpkin, but it does bad things to my blood sugar :( I did try your spiced carrot oatmeal idea from another video and that's been awesome.
