Nothing is special they cook just like a housewife, the dish is small and is expensive the cook ought to learn from the cook in Hong Kong especially from Tai Pai Ton,they have to use special stove for the aroma
Never underestimate a housewife's cooking skill - but I’m pretty sure not many housewives can cook like this, at least here in London!
I think it's several levels above a housewife's skills. I am pretty sure a housewife does not make her own fresh noodles daily or use 35-day dry aged ribeye.

Clean hands are cleaner than gloves. People tend to wash hands in between touching different things but use the same gloves to touch multiple things.

only negative on this video is braising those abalone with aluminum foil cover. parchment would be much better. that foil slowly leeches into the water as well. especially when you have any acidity in the braising liquid.

Darn, love the channel..but there are so many Japanese “restaurant kitchen” video channels that cover Japanese and Asian cooking in professional kitchens. Still a big fan, maybe branch out to cuisines that are not widely covered on utube including European food
