Been watching your videos all morning! Thank you for sharing so much information
Heirloom tomatoes can be big producers , they need more cultivation , you are right heirloom , varieties do not have the disease or pest resistance , this is where the cultivation is important , the plants have to be monitored , carefully , pay close attention to the leaves & stems of the plant , prune carefully , to control pests & promote airflow through the plant . I have made mistakes with watering & fertilizer too , heirloom tomatoes do not like a lot of nitrogen , if miracle grow is used ,mix one tablespoon with two gallons of water , mulch & compost is important too , do not leave out the microbiology , encourage earthworms , & plant with companion plants , carrots , onions , sweet corn , garlic , I have had fantastic success with tomatoes grown next to castor beans . Variety is very important too , homestead , an heirloom tomato , will always out produce Brandywine , homestead fruits usually look better too , heirloom varieties can be gorgeous to look at , however , one needs to know when to harvest them , black krim , is a very susceptible to splitting , so , cut back on the water , & pick the fruit earlier , allow it to ripen inside , I have harvested over thirty pounds from both black krims & black prince tomatoes ! You are right about hybrid tomatoes , you can save the seeds , & the next generations will be better , this also true of heirlooms , I have saved seeds from Brandywine Red seeds that way out performed the original seeds that I bought from the store ! I grow both hybrids & heirlooms , it is true , heirlooms require a whole lot more care , so much more that a lot of gardeners give up on them but wow they are delicious!!!!!!!!!

Thanks for sharing! Leaf mold is low in nutrients. It’s a great mulch and great for water retention. Leaf Mold: Leaves will break down mostly through the action of fungi as opposed to bacteria, resulting in very little temperature increase. The resulting leaf mold is low in nutrients. it's mostly carbon plus minerals. This makes leaf mold a fantastic soil amendment, but not a fertilizer. Compost: Compost on the other hand contains three primary nutrients needed by garden crops: nitrogen, phosphorus, and potassium. It also includes traces of other essential elements like calcium, magnesium, iron, and zinc. Instead of relying on synthetic fertilizers that contain harmful chemicals, composting offers an organic alternative. Both have a place in your garden soil.

This is another reason why you need a hammered wok. It uses less oil and acts like a deep fryer. It can also keep the heat even while you are frying the oysters at 350 degrees. In a wok they will be golden brown in less than 3 to 4 minutes and not over cooked inside. You are right about the yellow meal. But I don't want anything but salt and black pepper for seasoning saving the great flavor of the oyster. You can also have the dipping crap. Just my opinion. Chef Jerry Irmo South Carolina
