    • @overheadrecipes
      @overheadrecipes 5 днів тому

      Hi Nicholas. You can boil but in very low heat. If possible you can try the “double boil” method where you boil a pot of water then submerge your metal container with milk to heat up the milk gradually. Once warm enough you can use the aerator accordingly. It is quite troublesome though. If you really want frothy milk easily and quickly it may be worth investing in those plug in milk frothing machines that they sell with Nespresso type of machines. They can give you a satisfying milk froth in seconds

      You can actually hear it. Visually, it’s usually the point where you’ll notice the beans completely shift out of the raw white/beige state and also see chaff shrinking and start turning into finer burnt pieces rather than flaky skin sheets.

      Irrelevant. Mechanically not enough pressure for the machine. At least for this specific tip I purchased. Some later comments from 2024 have indicated that there is an official multi hole nozzle from Breville, that’d be a different situation if it’s engineered for the BES’ output capacity. The one in the video was a generic one meant for all HEX and DB machines

    I use the 4 holes and give you my experience. Having had a coffee shop for many years with a 4-hole Faema, it was normal for me to make the change from 1 hole to 4: less working time, better foam yield. The problems you notice in your video are caused by the container being too small, you need a little bigger and with a little practice the final result is satisfactory, practice without wasting the milk, use water with a little liquid detergent. Greetings to everyone from Italy! Franco. ..oops..I forgot to write that the position of the steam wand must remain straight and not inclined

      Hi, I understand that point if we’re referring to a typical double boiler or heat exchange generated steam. However, with the home grade Barista express in the video, there simply isn’t enough steam power to compensate for the reduction of pressure at the inlet of the nozzle.

    Just a couple things even though this video is old it came up for me. 1. The manual says that you should turn the steam on. And wait for it to heat and start pumping a bit before turning it off and then putting it in the milk and turning it back on before it flushes with water to cool the heater. This gives you the maximum steam power near immedietly rather than waiting for heat up. 2. 4 hole and 3 hold steam tips need to be places in different areas of the steaming jug. The 1 hole tip should be as you used it. Towards the side. But a 4 hold should be nearly in the middle and pulled just barely away from the middle either forwards or backward. Not to the sides. I've done a 4 hole mod on mine and if following proper procedure. It's way faster on the barista express. About 15- 20 seconds max for enough steamed milk for 2 standard cappucina cups. 250ml So if someone has already bought one. As long as you preheat the wand and use the correct placing you will be fine. You will still need some practice. It's far less forgiving. But works better and faster if done right.

    • @overheadrecipes
      @overheadrecipes 7 місяців тому

      Hello, yes I do let the pump engage before steaming however the machine simply doesn’t have the steaming capacity to eke out the pressure needed. Note too that, the nozzle I used for this comparison are designed for dual boiler or hex machines (ie larger inlet hole and outlet holes as well), if you’re replacing the stock one hole with the Breville 3 hole designed for newer Touch machines for example, it’ll work but still lose the pressure equivalence. It’s just basic physics that we can’t overlook, a single output hole will produce more pressure than 3 if the input pressure didn’t change and is at max capacity.

      @@overheadrecipes yes, absolutely, your video is just what people need. Maybe you can also help me with something else, I called Bosch and they couldn't answer for sure either. It concerns the "auto" program, which towards the end of the cycle starts a further timer of about 40 minutes where the machine remains completely still, but without error messages or anything else, the timer continues until 0:00. I hypothesized that it is a "natural" drying phase after which you can open the door, but Bosch didn't seem sure and it doesn't say anything in the manual. The other programs, however, perfectly respect the time indicated on the display, so I don't understand why the auto program requires this additional phase and the others don't.

    • @overheadrecipes
      @overheadrecipes 8 місяців тому

      Not official for our machines, but from what I understand, all auto or “smart” mode have a lengthier post dry time wherein they include a gradual dissipation of heat for sanitation mode that manual modes (eco or heavy etc) don’t. Those modes when it ends it ends, you will most likely see a steamy interior when you first open compared to auto mode where it’ll just be room temp dry

    great video. On my way to buy one here in Sweden.. the exact one you showed in the video. I need to see if I can figure out how to hook it up. I have a very small kitchen in a very old apartment in Malmö, Sweden. I'll ask them at the store if I can connect it to my sink somehow.

      Hello. Connection is pretty straightforward. Water inlet then a drain hose. The latter you can just drain to a sink if you don’t have an exposed drain pipe. I did it myself in 10mins pretty much. I’d also advise checking if the plate slot gaps and sizing is suitable for the dishes and stuff you own. I’d say if you’re mainly a standard plate user (like no raised lip edges) it’ll be fine. But if you’re like us in Asia where bowls are common, it’ll be a bit not ideal as the prongs are a bit narrow between each other and you can’t remove/adjust them.

    To be honest. I prefer tablets or capsules for dishwashers. It’s a single dose and is as simple as it gets. I’ve used them in small and super larger loads and in both circumstances nothing gets damaged or filled of film instead both small and larger loads get the same level of clean . So tablets and capsules for dishwashers are all the way for my needs. I’ve had awful experiences with powder and gel for dishwashers. Including stains left behind EVEN with correct dosages. I do use salt and rinse aid so there’s no excuse why power and gel doesn’t give me satisfaction results while tablets and capsules always have gave perfect results and perfect stain removal each and every time.

      Thanks for sharing. In my experience, the pods are just a tad too much. Regardless of brand used, if on Auto mode it leaves some soap smell residue unless I use the Hot mode. So far the past 2 mos I've been dosing with 15g only and sprinkle a little on the door sill and have gotten similar results sans the soap smell and taste plus it's almost half the price versus pods. But of course, we all have variables like water, the surface of our dishes, and the food we leave on the surface so it's expected to have variances in experience. Thanks again for your share!

    Updated.I have found it. The perfect method with a hand wisk. First make sure your wisk batteries are not running down. After warming the milk in a 500mL glass pyrex jug place your 200-250 mL of milk into your 600 mL metal pitcher. Tilt your pitcher at around 30 degrees angle, place the wisk onto the shallower side just below the surface around half to 1cm. Now wisk for 2-3 seconds, no more or less to introduce air into the milk then immediately move the wisk to the the opposite but bottom and deepest part of the angled pitcher and vortex the milk for 60 seconds. You should hear the wisk sound lower in pitch at the last 10-15 seconds. Now tap out the air from the metal pitcher. Gently pour the milk back into the glass pyrex jug, then back into the metal pitcher, keep rotating and tapping out any bubbles. The milk is now perfectly microfoamed. Important when generating the vortex fractionally move the wisk about a centimeters away from the wall towards the center of the base. If you don't the vortex will be poor, if you over move the vortex will start drawing in air and generating bubbles ruining the milk. Its an equilibrium of this for 60 seconds. Your milk will now have the consistency of wet paint. Without this consistency there's no latte art.

    Hi, can you advise how long roughly did you froth the milk during the first deep tilt frothing, and then how long did you froth the milk when you tilt it vertically ? Thank you !

    • @overheadrecipes
      @overheadrecipes Рік тому

      Hi Anna, not long but you usually base it off visual consistency of the milk. In general 8-10sec is plenty for a typical 200-250ml of milk with the tilt. Then vertically, it’s just for incorporation and getting rid of any larger bubbles on the top so 2-5sec is plenty as well. In total, it shouldn’t take you more than 12-20sec tops for the entire process. Hope that helps

    My 1st epresso machine was a Braun where tamping was not required. Tamping was done by the machine shower head and that the portafilter would "click" when truned to the right and stop when shower head was properly set on the portafilter. I noticed this too with Breville Barista Express that when "loose", that is, portafilter goes all the way to the right, it tends to have "channeling". What i do when this happens, I add a gram or two(2) such that the portafilter goes only all the way to the center. This leads to better extraction times. BTW, i ditch my "Puck" screen entirely.

    Thank you for this video! Trying to make this work with my IKEA frother. With 190ml of milk, how much are you actually using in a drink? Do you empty the whole jug of foam?

    • @overheadrecipes
      @overheadrecipes Рік тому

      Great question. I actually have a video talking about that but not with the frother in mind though the concept and ratio considerations are the same. In general, your mug size + coffee volume will determine your milk volume. Please check this one out for more details, Marco. ua-cam.com/video/_IgE2l-ePSw/v-deo.html
