  • This super easy Thai Green Curry relies mainly on eggplants as its main filler, you can substitute the chicken with any meat or seafood or even just keeping it vegetarian by adding asparagus, dense vegetable, or even pumpkin.
    Thai Green Curry is a perennial favorite for many curry lovers that prefer a less pungent and more creamy, mellow flavour.
    This recipe uses store-bought green curry paste, I strongly recommend trying different brands and read the labels as well.
    Note that you have to use Thai fish sauce for this recipe, not Myanmar or Philippines fish sauce as they give very different flavours.
