    Some key baking points:
    1) Use self-rising flour
    2) Adjust sugar accordingly
    3) Don't go crazy in mixing. The lowest speed will suffice for the cake itself. You can hand-mix it just fine.
    4) The egg whites are important, but you don't have to worry about deflating it during the mix.
    5) Make sure the cake pan is cool to touch before flipping over.
    6) Recipe is good for 2-3 servings in a 6" pan
    Ingredients:
    Butter - Room temp - 125G
    Egg Yolks (Separated) - 3
    Egg Whites (Separated) - 3
    Vanilla Extract - 1 TBSP
    Self-Rising Flour - 100G
    Caster Sugar - 80G (Adjust to Preference)
    Icing Sugar (For topping, optional)
    Recipe Instructions:
    1. Separate 3 yolks from whole eggs, keep the white separately.
    2. Smear some butter on a 6sq inch pan's surface thoroughly. Line the bottom with baking paper
    3. In a mixer, mix the butter and half of sugar at low/med speed until creamy but not melted.
    4. Slowly add egg yolks into the mixture at low speed.
    5. Once mixed, slowly add flour to the mixture. Scrape the edges as you go.
    6. Now we fluff the egg whites. Use your mixer's whisk attachment or do it manually (a lot more work) and whisk the egg whites at the highest speed setting.
    7. Gradually add the remaining sugar into the fluffing egg white until you get stiff peaks.
    8. Gently fold the egg whites into the buttered main mixture until incorporated. Be gentle.
    9. Pour the mixture into the pan, tap or drop the pan once or twice on a hard surface to remove air pockets.
    10. Bake for 30 Minutes at 175C (350F)
    11. Leave in off oven with doors open to cool for another 15-30 minutes AFTER baking.
    12. Remove from pan and serve.
    Great with toppings like jam, fruits, whipped cream, ice cream, etc. :)
