just fyi Shokupan are squared loaves that are baked in lidded mold. In contrary the loaf with rounded top like this is called 'Igirisu pan', literally means 'English bread'
Is the gram measurement correct? from my calculation, the hydration of this recipe is about 100% which would be impossible to work with. plus, the dough consistency after kneading looks more like a 60%-70% hydration dough. just making sure before I make the recipe! Thanks guys.
Agree! They should have checked the measurements first. I tried making this as per measurement indicated in the description box. The dough is definitely wet
I think I know where the problem is. The recipe in the description says 2-1/2 cups of flour but then is says 1/2 kg (500 grams). 2 1/2 cups of flour is only 325 grams which is 175 grams off. I will try making this with 500 grams of flour because I think that will have a hydration level that's easier to work with.
