Meatloaf, mom's way!

  • So, meatloaf is one of those meals you had when you were a kid and maybe not many people eat it a lot today. Well, I'm going to show you how to make an amazing meatloaf. I tried to copy what my mom did way back in the day, and since she passed away some years ago I tried recreating this meal as she did and its very close if not perfect. So here we go...
    Meatloaf:
    Ingredients:
    2 lbs of 80/20 ground beef
    8 Slices of white bread
    1/3 cup of minced onion
    2 eggs
    1/2 to 3/4 cup of water
    1 envelope of Lipton onion soup mix
    1/3 cup of ketchup
    salt
    pepper
    For the glaze:
    3/4 cup of ketchup
    1/3 cup of light brown sugar

    I use my big mixing bowl to shape my loaf using the sides. When it’s shaped just right I pour it onto my baking pan. Works perfect.
    Also my granny taught us to soak our bread in milk.

    Pretty close to the way we (my family) make it. We also use bread, as opposed to bread crumbs. I usually fry the onions first before adding to the meat mixture. I have never used onion soup mix. Looking forward to trying your recipe here. I’m sure it will be fantastic.

      Frying the onion is a great idea. I've done that before. I guess it all depends on the mood I'm in when I make things. Now I want to make another meatloaf and fry the onions. Thanks for watching!

    mad this for dinner tonight with mashed potatoesx mixed veggies, gravy. it was delicious! my husband loved it! thanks for sharing your moms recipe! oh i forgot to tell you that i used 2 lbs of premixed pork & 80/20 beef that was packaged at the grocery.

    Where's the veggies??? Brocc,string beans, asparagus,, MUSHROOMS, BRUSSELS OH MY!! I LOVE MEATLOAF, MEATABALLSA .. ANYTHING ITALIAN.     i chopped up 1/2 green bell pepper and sauteed with the chopped onion just until translucent and also added the garlic. i used chicken broth instead of water. added a pinch of salt to the ketchup brown sugar mixture. itherwise, followed your recipe. how did you make tour gravy?

    I like my meatloaf to be a bit more fancy, like with chopped celery and olives. The carbohydrate component can be a variety of things. I like Bulgur wheat, which should be pre-cooked before adding to the meat mix. Adds a slightly nutty flavor and is more nutritious than bread or crackers. I have also seen ground pork added - maybe about 1/3rd of the meat.
