In this video I had the tasting menu, which consisted of many courses inspired from all over Vietnam and even the world. However; you can do whatever you'd like to your food and there is nothing wrong with being adventurous with it . For me, this is not down my ally when visiting Vietnam. If I want this kind of food, there is plenty here in the US already.

I'm so proud of him.
I visited this restaurant last year and amazed the way vietnamese foods was carefully set up and prepared which is quite similar with japanese style. If I am correct, the chef he got Cordon Bleu certificate and this is why his way of cooking is something special. Thank you Max for the video which gave me more information about this restaurant and I definitely will go back there one day very soon

@nguyên nguyễn reasonably expensive. You can tell by looking at the way they prepare the foods. But I suggest you to give it a try, it worth the value.

I think not only the chefs like Peter are artists, but the food tasters like Max are also artists. I believe in every person, there is an artistic soul that we just haven't realized yet.
Watching Max's video is such a cure to my soul. The way Max describes the food is underrated and phenomenal. He makes you feel like you are actually eating the dish.

True true. I live in Hanoi, and travelled to Saigon in January. It's freakingly cold in Hanoi, but as soon as I stepped foot on Saigon, I miss that coldness IMMEDIATELY :)))
In the sea city like Hai Phong, Quang Ninh, ...the weather is quite pleasant
High-class restaurant with super-difficult techniques for dishes while still retaining Vietnamese cuisine. The carefulness in each dish and the detailed reviews from Max always attracts viewers. Great video.

As a person who has completed an apprenticeship in the fine kitchen, I can say that I have seen a lot of good cooks and this one loves what he does. What I missed here with the chefs in Germany, however, is the smile on his face and that he really shows the joy and love he feels for his work. great cooking on a super level.

It is sooo much food, plus the amount of staff, quality of ingredients. I know people think this type of food is expensive but margins are still very small, especially when some dishes takes, days to make. Thank you for watching and sharing!

Peter probably is the best speaking English in Vietnam . Amazingly his skill and the way he transform the traditional Vietnamese food into a modern fusion style . This is not a home style cooking but more like a 5 star restaurant for the rich in Vietnam .

I really enjoy REAL TRADITIONAL FOODS not FANCY ART. I big NO, NO for typical Vietnamese. Great taste and quantity is essential and preferred choice

The lady with the meat market really knows her stuff and there are French influenced chefs in District 1 making different dishes with Vietnamese food.

hmmm I don't think destroy is the right word to describe the effort of the chef. You will always find different versions of a dish you like/love. I just appreciate the out-side-of-the-box thinking from the chef.

VN people can be creative in their cooking. I have noticed a lot of new dishes which I haven’t ever seen before when I lived there. You are lucky to have an opportunity to try a lot of things.
Peter always looks so tired as if he needs more sleep. I'm glad he's still around as Sonny featured him and put him on the map a couple of years ago with the $100 pho and banh mi videos. That mi quang looks super yummy as well as the bo la lot. I would think the pho would get mushy if they have to bake the pastry and all.

This is fusion food and there is nothing wrong with it. Western chefs have been serving food like this for quite a while. Nothing beats the traditional way of eating Vietnamese food. I do appreciate how the chef takes this approach

It really was a cool concept, but I cannot help thinking the pho noodles would have gotten mushy since they have to bake it and by serving time, the noodles would have no chew left to it.

@@doodahgurlie if the layer of that pastry is thin enough to be baked quickly, I guess it would be enough to reheat the broth but doesn’t affect much the noodle texture. Though it may look interesting, flavor wise, I don’t think it’s better than normal phở.

All it takes is a good idea, solid background, and a daring attitude to venture the path unknown. Hoping for all the young chefs to be inspired by this man philosophy to reinvent and diversify and popularized the new Viet cuisine to the world. One recommendation to the restaurant owner is that trying to hire a more passionate and food oriented front of house. It seems like their lack of explanation sense will likely deter and confuse the customer experience. Nice and all, but I would much prefer knowledgeable staffs than normal nice approach

in my opinion, i would rather Vietnamese food produce in traditional way because the feeling when my mouth full cover by food and 100% flavor is enjoyed, the size of Vietnamese dishes like Mi Quang, or banh bot loc is an important cause so for me big bowl mean it's delicious, However i still appreciate what Peter is doing to help the Vietnamese cuisine upgrade to a higher level and complete it perfectly day by day. I'm so proud of him and you who lend us a hand to show whole world how incredible Vietnamese food is. :DDD

Personally, I dont believe our cuisine fits the definition of FINE dining set by the western culture.
First of all, FINE dining is both an experience for customers, and a standard for the western restaurants. FINE dinning has nothing to do with cuisine because cuisine has been on earth for thousands of years. So it is meaningless to change Vietnamese cuisine to fit it into a western standard.
Secondly, these FINE dining dishes look unappetizing to me, because our cuisine was not created to fit the FINE dining standard of the west. They need to understand that our cuisine was created to serve the royal family, which requires a standard that is way above what they call FINE dining in the west.
Sure, if it is a western fine dining restaurant, I dont mind paying $1000 for 28-32 courses, but I will always say no to the so-called Vietnamese fine dining. It sounds like we still haven't known how to make good food after 4000 years of existence.
