The brand of curry can be Indian Malay or Chinese curry powder , for me when I cook curry or used it as a dip , I go for Indian curry power , any brand is good/ depends if you like it mild or spicy or moderately flavorful . I prefer the pork belly however I will reduce the dark sauce / vinegar, too high for my diet.

My favorite hainanese curry rice is the one in Blk 65 Telok Blangah! Miss singapore food so much and a curry rice was one of my favorite dish and probably the only one I haven't been able to recreate yet! Second hardest one was Salted egg sotong! :)
I want to know how you make the pork for the pork fried Rice. ?. I saw the video for the shrimp fried rice. Do the rice necessarily have to be cook from rice cooker.? For I do not have one yet. Is there a big difference? Soon to get one. For I want to learn to make this for its one of my favorite dishes besides taco and McDonald's food. I learned those. But like my home made Burgers as well.
Haha we love burgers too! And fried 🤓🤓 you don’t actually need a rice cooker to cook rice. You can use a normal pot and cook rice over the stove too. This is a good option especially if you don’t consume rice regularly. For Chinese and Japanese, we need our rice cooker because we eat rice like nobody’s business. Cooking rice in the rice cooker frees up our stove for other cooking and also it’s more convenient. Thank you so much for requesting pork fried rice. Hi Greg. You can use any brand of meat curry - go for Indian curry. Sorry we can’t remember the brand that we used because it came in a huge packaging and we transferred it to a bottle with no brand on. Haha.
Would it be OK to substitute Japanese rice wine (sake) for Chinese rice wine? It is easy to find sake at any supermarket here in California, but from my area of California I need to drive an hour to the nearest Chinese market.
Using sake may change the flavor of the recipe entirely. Its one cup! Sake has a much more subtle flavor than Chinese rice wine. Normally ppl will substitute sake with rice wine instead of other way. If you still prefer sake, buy "real" sake instead of "cooking" sake. Can't you order online?

Hi James, sorry for our late reply. No problem. You can use either steps. The purpose of marinating the pork with the dark soy sauce first is to ensure that the pork darkens nicely. Even without doing so, this recipe also achieved the same result. Taste wise there's no diff. Unfortunately, you can't use Japanese curry cube. The taste is very different. You don't have to use yoghurt in the sauce. Just cornstarch will do. Hope this helps. Happy cooking!

you left out the most important part which is the curry powder. if you buy any ready mixed curry powder you can never get the same flavour like those sticky scissors cut hanan curry. what are the spices, ginger , galangal etc .
Hi Vincent. You’re absolutely right. In fact we tried two versions, one with coconut milk and one without - both ok the same day. We found the one without coconut milk resembled closely to those served at curry rice stall that’s why we decided to show all of you this recipe instead 🤓🤓

Substitute your cornstarch solution with coconut milk on curry. Much better flavor 👍
