    I made this just this morning. Wow-it turned out amazing! I’m an experienced fmf bread baker but I’ve never used the tangzhong method before. I am impressed! I also autolyzed for 45 minutes or so. I look forward to making rolls!

    Your bread looks amazing!! Thanks for posting the how-to and recipe. My bread from fresh milled flour is usually pretty dense, so I'm going to try this recipe soon.

    This looks amazing! Any tips for making it using sour dough starter versus instant yeast?

      Thank you! I haven't tried using sourdough in place of the yeast for this yet.

      You can, I just don't know what ratio. I'm assuming it would make it a little wetter, so you might need to add extra flour to make up for it.

    Could you spray a little bit of olive oil in those cast-iron pans you won’t even need parchment the bread will just pop right out.

      Yes, I find I have better results just coating the pans with butter now that I've used them more.

    Could you make this recipe with just soft white? Or just hard red?

      You could use hard red, but not soft white.
