    Soft Idli Batter
    NO ADDITIVES NEED
    Ingredients
    1. Parboiled idly rice 4 cups
    2. Urad dal 1 cup
    3. Fenugreek seeds 1 tsp (helps in blood sugar control, lower blood lipids, anticancerous activity, immunomodulation, and pain relief)
    4. ROCK Salt as per taste
    Preparation
    1. Wash 4 cups idly rice well and soak for 3 hours.
    2. Wash 1 cup urad dal ,1 tsp fenugreek seeds and soak for 2 hours and keep it in fridge.
    3. When urad dal soaks in water in the fridge, batter will be nice.
    4. Urad dal also can be kept outside.
    5. After 2 hours urad dal will be first grinded.
    6. Batter should be a like thick.
    7. Minimum 20 minutes urad dal should be grinded as shown in the video.
    8. Then grind idly rice for 20 mins and consistency as shown in video.
    9. Mix well both and add salt to taste.
    10. Allow the batter to rest 8 hours for fermentation.
    Kongu special tomato chutney
    Ingredients
    1. 5 to 6 tomatoes
    2. 1 onion
    3. 3 green chillis
    4. Curry leaves few
    5. Coriander leaves few
    6. Turmeric powder 1/4 tsp
    7. Chilli powder 1/2 tsp
    8. Oil 3tbsp
    9. Salt as per taste
    10. Asafoetida 1/4 tsp
    Tempering
    1. Oil 1 tbsp
    2. Urad dal 1 tsp
    3. Mustard seeds 1/2 tsp
    4. Red chilli 2
    5. Curry leaves few
    Preparation
    1. In a kadai add 3 tbsp oil.
    2. Once heated add 1 medium sized cut onion and sauté.
    3. Then add 3 green chillis and sauté
    4. Once onions turns like mirror, add 5 to 6 chopped tomatoes. (DON'T ADD WATER)
    5. Once tomatoes become soft, add 1/4 tsp turmeric powder, 1/2 tsp chilli powder, and salt as to taste.
    6. Once becomes soft and gravy, add coriander leaves.
    7. For tempering, in a pan add 1 tbsp oil, 1 tsp urad dal and once golden brown add 1/2 tsp mustard seeds.
    8. Then add 2 dry red chillis and few curry leaves
    9. Add the tempering in the chutney and mix well.
    Tasty and tangy Kongu style tomato chutney is ready.
