The way I do the cleaning process will speed up your time: wash the beans thoroughly then put them in a bowl or pot of cold water covering the beans about three inches. Stir the beans with your hand and the bad beans will float to the surface, that's it simple. Rinse the beans again and you are done. Also about the foam. Skip skimming it off because when you rinse the beans at the cooling process right before you put them in the crock pot it will rid the beans of the gases. There, I saved you some serious time. God bless you and thanks for a great vid! Also, I put in turkey bacon cup up, but you could use port bacon for an even greater flavor. Cheers!

I believe the molasses I used was heavier (more potent) than the one you used. We did end up rescuing the dish with tomato paste, more sugar & tomato paste. Thanks Dan & keep up the good work. If you add a teaspoon of baking soda to the soaking water it also helps get rid of the musical quality of the beans, and you are spot on about dumping the water.
The majority of the carbohydrates responsible for intestinal distress leach out into the *soaking* water overnight, so that is the only water you should throw away. The carbohydrates responsible for nutrition remain in the beans and the *cooking* water, but the intestines have no problem digesting those. Yes, that cooking liquid is valuable to the flavor and texture of the finished dish.

I realize this video is a couple of years old but I just found it. Have you ever cooked the beans on a grill instead in a slow cooker? Seems like they would really be good with a smoked flavor.
I watched a few baked beans videos and I think I am going to try the americas test kitchen version today with left over bbq chicken thighs that i will remove the bone from and add extra salt too, anyway thats what is on hand we will see what happens. Wish i had some left over pork instead but today it has to be bbq chicken thigh.
I have Mustard Seed but no Dry Mustard will this work? Or should I use regular mustard in the jar? Also, can these be cooked in a pot on the stove? I don't have a crock pot. I hope you get back to me soon cuz I'm going to make this for Sunday lunch. Thank you.
I noticed that you didn't add any meat or hotdogs, would you recommend waiting halfway through the time it takes to cook the beans to have hotdogs. I wouldn't want to cook a hotdog for four hours.
hotdogs are pre-cooked mostly so the only time you'd be looking at would be to reheat to your preference, so probably 20-30 before the beans are ready is when you'd put them in
OKAY. I just made them~! I love your advice and I know it's true about getting rid of that water to get rid of the gas. Anyhow, I made it but put it in a 250" oven (rather than in a slow cooker) after cooking the beans until they "cracked. " Also added 1/2 c. organic ketchup, 1 TBL. Worcestershire sauce, 1 TBL. liquid smoke and 1/8 tsp. each of ground cloves and ground allspice as well as about 3 TBL. maple syrup to the recipe, leaving out the onions and garlic. Cooked in oven for 6 hours but they probably were ready way before that, like after 4 hours. Oh, and I left out the onion and garlic in memory of my Dad, who used to make Boston Baked Beans for us but never put in onion or garlic because he hated onions. (Love onions myself~!) Everything else I did exactly as you said to do and thank you so much. It was really, really hard to find good advice on how to make baked beans. I also don't eat pork and am on a salt-free and oil-free diet, so this worked out perfectomundo. I looked at more baked beans cooking videos and no longer think you are in the top 3. I think you are the BEST...! :) I also TOTALLY AGREE that zero salt is needed in this recipe!
lol. I don't think I've ever manually inspected my beans for defects. Nice recipe though. I like to use kidney beans, ketchup, onion, honey, soy sauce, apple cider vinegar, pork belly, dry mustard powder and garlic.
that inspecting went out with better handling from the field, better combines and cleaning fans and sorting machines. even soaking has went out., just put them on the stove, bring them to a boil, cover and let set until cool, about an hour.
Your baked beans from Jul 11, 2016 you tube video, you did not have any ketchup in it, and that looks like a lot of molasses. If I would make I would cut back, it takes over the taste too strong. I enjoyed the video

Yeah, but what he is doing takes the gas out. Some people have a lot of trouble with the gas from beans, although I hear that if you eat beans regularly your digestive system will stop passing gas from them!

If you add about 1+1/2 tablespoons salt to the overnight soak water it softens the skins.

My mom always put in a big vadalia onion whole. This way us kids that did not like the onion did not eat it, my dad did...but it flavored the beans.🙂

What no bacon ? Pretty light in color. I never pre cook my beans and they never come out crunchy. I just pre soak overnight and rinse .
