@@Dichtsau i think you can substitute the pork with some other ingredient. i heard from a Norwegian friend that there is an algae that when fried has a taste similar to that of bacon. i wonder if it can be used for flavouring a vegan version of this recipe.

Are there really that many weirdos like myself that long for the old simple ways of life? Goodness, I can't believe how many people are clicking on such an obscure topic. I love it. Love the channel. Sometimes I wish I had a time machine, but this is the next best thing. Trying to learn all the tricks to live an off-grid self-sustainable life someday. Thanks a bunch...

I too wish for the 18th century life except mine would include electricity and running water.

I think growing up in such contidions, being on starve mode much of the time, and eating probably the same thing all year round wouldnt be that cool. It would be different going back in time and being a rich lord or something. Even they had some ugly times tho.

I've gotten my hands upon a surprising blackstrap. It's flavor profile rides the line between medicinal blackstrap and lighter molasses types. It's strong and pretty sweet-- Sweet enough to be appropriate for this recipe. I commonly use it for a hearty dark brown sugar mix, as well as for cookies and cakes. It's fabulous in a plantation cake. I use Golden Barrel unsulfured blackstrap.
I love Golden Barrel blackstrap. Been using it in rye & wheat bread for ages. They also make an excellent sorghum syrup.
I've been eatin it by the spoonful since I was tiny!

my grandparents worked in the mills (when America HAD mills and were independent), in Newmarket, NH. They tell of taking their beans to the local restaurant, (Kingmans or Rexalls Drug Store) store on Saturdays and the store owner would cook the beans all day while they worked. At the end of the day, they picked up dinner for that night....brown bread, beans and sometimes hot dogs....I remember my grandfather soaking the beans in later years....when the store didn't cook them any more and saturday work days at the mills was rare....any way.....he would prep them and my grandmother cooked them. We used molasses but I do from time to time use maple syrup....REAL maple syrup....not that high fructose corn syrup GMO garbage! Very New England.....lots of memories.....
Humans have been genetically modifying plants and crops since the dawn of agriculture. GMOs don’t make you unhealthy and certainly won’t kill you, unlike those undercooked beans.

A few years ago I got into making beans every sunday.. was a major treat at the beginning of the new week. Very filling and a joy to make when it turns out as delicious as canned beans. My ex gf loved it. Beans n Nascar

Made ths in the dutch oven in my home oven, here's a tip: If using that method I found to add a bit more water but after a couple hours of 350 to make sure the raaw pork was cooked? I turned the heat down to 250 for another six hours, added 2 cups of water at that point (used a pound of beans and a lot more pork truth be told... wanted this one very meaty). Pulled the lid off and it was absolutely *perfect*

My great grandmother's cookbook receipt (yes, she spelled it that way) says she put a long thin roll of bread dough around the seam of the bean pot to seal it.

No Blackstrap? I'm from an old New England family, in VT, and they swear the best beans they had eaten were my Blackstrap Beans... True salt pork really DOES have a better flavor, though.

PS: Prefer "true salt pork", too. Grew up on home grown & produced salt cured pork.

Blackstrap has the best nutritional profile by far too, it's a superfood.
A bit more water, and perhaps a little maple to sweeten it.

James, I recently walked into a second-hand junk shop here in South Africa and found myself staring a a Denby Gourmet Bean Pot circa 1975, made in England, in Derbyshire. 4 litres which about two quarts. Brand new, unused. They want R50 for it which works out at about $3.30. I'd been staring at yours (which looks a lot like mine!) and wish I could afford it! But vonsidering I would have paid your price multiplied by about 16 that was out of the question. I think God must have heard my envious sighs!

I didn't know about the toxins in beans. The first time I made Lima beans from dry beans I didn't let them soak long and I was pulling individual beans out of the pot here and there and eating them crunchy while they were still undercooked and got very sick for almost a month. Right off the bat was vomiting and living in the bathroom. I had fever, chills and it turned into pancreatitis. That was the first week. Then it took another week to feel slightly human. Took about another 2 weeks before I was back to my regular self. I wanted to die.
I am going to try that recipe!

So much sugar *shudders* I much prefer the saltier style of beans you find in large parts of Europe
Dracounius, the entire US doesn't make beans like this. In the Midwest, South and Southwest beans are more savory and/or spicy. Southern red beans and rice as an example.
Boston style or New England style beans in a molasses sauce. Served with brown bread, whole wheat or corn bread. Very traditional to the region.
Here in Indiana (midwest or great lakes, depending on who you ask. Lol), same state as Mr Townsend, we use brown sugar in our baked beans, but they have much more of a savory flavor (with a slight sweetness).

Both styles of the beans that were cooked looked overcooked and to dry for me. But that's just my opinion. Thanks for sharing your recipe.

I soiled myself with a pot of ground boiled beans whilst at a hanging and a young fellow triumphed "this gentleman is feasting upon beans!" Both the peasants and nobles broke out in a thundering laughter.
I've been watching these videos for about 5 years now. Have enjoyed them greatly. Sometimes I end up going down a Rabbit Hole that never ends. As much as 8 hours at one time. Providing I have nothing that needs doings. Like yard work on my day off. Anyway,maybe someone can tell me this : Barbabos Malasses isn't cheap. Ive tried to find it and it is very difficult to find . How long does the stuff last, if refrigerated. Besides beans I would not know what else to use it for..... Oh.... passibly ginger bread. Which by the way is sorta dangerous for me. Insulin dependent and insulin resistant diabetic. Sorta takes the fun out of some things. Moderation usually saves the day.
As for the molasses....will it keep ? Where is the best place to buy. I live in East Tn. All we have is Black Strap. Need I say more. Gotta go,so Ill say Thanks in advance.

This captures the essence of the classic PBS shows I grew up watching in the mid 90's! This channel is an instant classic that I can always come back to and get great enjoyment from watching. I can also learn something new every time!
Perfect description. There was this in the 90s and, in my region, a state outdoor channel that would show you all kinds of herbs and items in the woods you could use for things.

I think I may have added too much salt pork (despite soaking it in water for hours and rotating the water a couple times)... I think I used too much mustard powder too, LOL. I also used Pinto beans, but next time I'll use Navy beans, I think Navy is what he used here. He gave measurements to use for the seasoning and sweetener, but I don't know how much dried beans, onions or salt pork should have been used. I went with 1 pound of dried beans and 3/4 of an onion, but now I'm thinking I should have gone a lot more easy on the salt pork, used a tbsp of mustard powder instead of the massive spoonful I used,... hmmmm and maybe just half an onion next time (my onion was a huge one though, if I used a medium onion I'd dice up the whole thing). It doesn't feel like I used enough beans, but that's probably because I went too heavy on the pork and onion.
I did find an interesting reference, in the early 1900's the "Farm Women’s Union of Alberta" published some cook books, and one recipe in the second edition was titled “Boston Baked Beans” and very well may be based on a much older cooking recipe from the 1800's, I think I'll use that recipe as a reference for portions, but will stay with the ingredients list noted in this video.

@@WolfyAteUrSocks There is nothing wrong with wood ashes, probably more clean than your average restaurant fork. Ashes are also an abrasive and were used as an ingredient in the making of soap.

I grew up in New England. We had baked beans every Saturday night they would bake in a bean pot in the oven at 200° for about eight hours, my mother used to put a little fresh ginger in there also and my mom would make steamed brown bread

3:20 my mother used to use stewing beef and a shin bone when making 'bean jar' (baked beans). Others would use a pigs trotter and belly pork... Both were delicious... Common practice was to take the 'bean jar' to the baker, who charged a penny, on a Friday night and pick it up on a Sunday afternoon... Oh boy, it was so good... 👍

Mother baked beans every Saturday...All day in the oven...I loved them. Use to even take them to school in my sandwich. The kids laughed me, but I did it anyway. Enjoy beans on toast at breakfast even to this day. Those were DELICIOUS BEANS ! We also sold them to the restaurants and stores in town. Wonderful memory ❤️ 👀

I can remember watching this very shortly after it was released. Cant believe it was almost 10 years ago and how far Townsends have (deservedly) come since! :)
this is almost the exact recipe we use for Sunday supper on my father's side. except the ingredients mustard, pork, butter salt pepper go in the bottom, then add the beans and sink a while skinned onion half out of the beans, pour 1/2 cup molasses on top then the water. I'm 40, and this recipe goes back generations. delicious. we all have our own bean pots. my mom has my grandmothers.
It's really lovely how recipes are passed on from generations to generations. Long may it continue!
No doubt. You like to eat beans. That's wonderful. I enjoy them too. I was always a bit wary of making my own, but after reading now I can imagine how delicious they must be when you make your own from scratch.
The molasses really makes the dish. I use blackstrap since it's easier to get. Just add a half cup white or brown sugar.

Baked beans will always be a perfect late autumn/winter meal. It’s delicious, hearty, and sticks to your ribs and keeps you warm in those cold months. Definitely a comfort food for me
And, the whole house smells so good on a brisk, autumn day... (!)

Watching this nine years later, i think this was my first Townsends video... Now it seems like this was an eternity ago, and John has developed a very vibrant and endearing stage persona. This early video has the same charm and exceptional craftmanship with food but feels almost... hectic in comparison to more recent Townsends. All i'm saying is, it's been a fantastic 9 years and here's to decades more!
