Played a lot of ADOM, Dungeons of Dredmor, Sword of the Stars, ToME. If Dwarf Fortress counts, that one is my favourite. Funnily enough, my first introduction to the genre was Chocobo's Dungeon 2 back in 1998 or 1999.
