I doubt it's a one person job, I watch Japanese videos of the same type pretty often and they've usually got 2-3, sometimes even 4 people going at once. It makes things easier, faster, and way more precise (ex. The shapes are more even, straight edges, the candy is more malleable and sticks together better, measurements such as the orange on the outside are usually the right length, etc.) The slow, one-person style is probably only for this video
