Part II: • What I Eat with Baba i...
We are all about traditional living in the Balkans and Easter in Bulgaria is no different! Today I will show you another amazing dish my Baba (grandma) cooks in our little Eastern European paradise: Bulgarian Kuzunak (Козунак)!! This is a big deal because Baba agreed to share her secret recipe with you all and I really think you will enjoy this festive deliciousness!
Warning: Kuzunak is very difficult to make and requires tedious attention to detail. IT TOOK US 15 HOURS TO MAKE!! But was well worth it! 🥖🥯 🍞
    ABOUT ME:
    Hi guys!
My name is Laurie and I swapped metropolitan city life (Manhattan, New York) for a simple farm life in the Balkan Mountains (Eastern Europe). I literally woke up one morning and realized NYC wasn’t for me. I booked a ticket (the same day), packed a little suitcase and moved to a teeny-tiny Bulgarian village- lost in time. And when I say lost in time I mean LOST-IN-TIME. No time crunching jobs, no watching the clock, hardly any internet service at all, really. Imagine a village from the Middle Ages… that’s pretty much what you get here. And I’m loving every second of it!
Update: My boyfriend and I have saved up and begun renovating our ancestral homestead (farm house). It hasn’t been easy but definitely interesting and extremely rewarding. There is nothing better than farming, havesting and foraging for our own food… and keeping tradition alive. 🌱

Ahh the time and effort to keep a tradition alive , in these days of mass produced food with ingredients that were never meant to be .The time and sleep from what you've described to have that first taste and then the silent moment where heaven and earth meet for a brief second , that first bite and the flood of memories as if it was the first time it was eaten .Few things in life can replace the senses ......taste smell touch ......Long live the bearers of traditions who tirelessly work to keep that smallest but most important part of who you are alive....................Long live grandma's .

Баба Нина е толкова скромна! ❤ And as usual, she's correct. Nothing in life is easy, but if it's worth doing it's worth doing properly. 😉 Tell your chicho I owe him a belated birthday drink! 🍻

Chicho says thank you so much!!! We had a blast and I think he loved our gift to him. A bottle of top shelf whiskey and a lamb from our farm. 😃

Great question because we have the same problem when we make large batches. Yes there is! Baba puts it in a clear plastic bag and it stays soft for days! The key is just to be sure to put it in the bag right away if you don’t plan on eating the whole thing. If it’s already hard you can make it into bread pudding or French toast! Sooooo delicious 😋
Thanks for watching and for the compliments! If you have any other questions let me know 😊

@@sistersofbulgaria9396 this, just make sure to wait until it's not hot anymore.
Another solution is to freeze it, just like you would do with bread if you want to conserve it.

I knew nothing about kozunak until Laurie posted, but fridges and freezers are high humidity environments (and the cool/cold also slows down bacteria growth) so that might be another way to keep it moist and preserve it. Also the trick for dry bread may work - wet the surface and microwave it for a few seconds or heat it in an oven. It's all about preserving moisture or rehydration.

Oh yes! You can definitely reheat it in the microwave. We usually put a damp towel on top and pop it in for just a few seconds. Freezing refrigeration is also an option if you want to preserve it long term but I try and stay away from refrigeration because I find it changes the texture.
