►4 lbs (12 medium) russet or Yukon gold potatoes, peeled
►1 1/4 cups hot milk (we used whole milk)
►2 sticks (226 grams) unsalted butter at room temperature
►1 1/2 tsp salt, or to taste (we used sea salt)
►1 Tbsp fresh parsley or chives, finely chopped for garnish (optional)

I could seriously eat mashed potatoes for every meal for the rest of my life and die happy! There are so many variations, but plain ol' buttery mashed potatoes are always welcome at the dinner table. Love this recipe!

This is a great recipe. I usually add my milk and butter and mash in the pot over med-low heat. So with this recipe I put the mixing bowl and whisk attachment in the oven on warm first. Delicious!
I use heavy whipping cream. Another way is adding sour cream and cream cheese. Super rich and delish!

I use an electric hand mixer, or mash with a fork for more texture (lumpy). I salt the water during boil and also add about a 1/2 teaspoon dried garlic powder. After mashing I do a salt check and add to taste. Sometimes I leave about half of the skin on and call them dirty mashed potatoes. I use half and half for the dairy. Alternative, i've found using a good chicken stock instead of dairy is flavorful without the creamyness of the milk as long as you whip it up real good and aerate the potatoes fluffy. I made the mash potatoes and everyone loved it! I was a little worried about the amount of butter, but the butter made it so creamy and delicious! It was not heavy at all. Interesting. My great aunt uses an electric whisk for her potatoes but I just bought a ricer for mine. I also cut my potatoes into smaller pieces, that way it's about 10 minutes for boiling time.
