When I released my take on the Mississippi Pot Roast, it went gangbusters. And I can't say I'm surprised. Featuring the most tangy/savory/sweet gravy draped over a fork-tender chuck roast and peppered with zesty peperoncini/banana pepper rings, this dish melts away like butta.
But a lot of folks requested a version that focused on chicken. And when you speak, I listen. And so I'm thrilled to share with you an outrageously grand Mississippi Chicken! But make no mistake, this isn't merely a substitute dish to a roast. No, sir! In fact it's so wondrous, it deserved its own recipe write-up!

I just made this couple hours ago. And oh my! It is so good that I ate 4 pcs 🤣. I am a Filipino so I ate it with white rice. You never disappointed me with your recipes. I have your cookbook & your recipes are the only dishes I make in my instant pot. Thank you for all you do!!!
I just made this dish. I did everything to a T. It was delicious. My 9 year old son is my biggest biggest food critic and he loved it. He scored it 11 out of 10. I often have him help me in the kitchen when making your meals, but today I wouldn’t let him help because I knew when he saw the banana peppers and banana pepper juice, he would freak. While it was cooking I let him make “the frosting” like I said he loved it and after the meal I showed him the video. He couldn’t believe there were banana peppers in it. Keep up the great work Jeffrey. My family thanks you.

LORDY! This is the BOMB! I had no au jus so I used all beef broth. Made 6 thighs instead of 8 for 2 ppl. NOM! NOM! NOM! Wish I had made 8. Couldn't stop eating this! AB FAB recipe! Thank you for posting. Will DEF make again and again and again!

I have this in the IP right now! I googled quick and easy chicken thighs and it brought me here. I had to debone the thighs myself which was challenging but I didn’t cut myself 😊 it’s too hot to eat, let alone make a side so I’m super thankful for my IP and you rn!

I made this a couple of nights ago (without the shrimp & crab boil, unfortunately). It was fantastic! My son and I have been feasting on the leftovers. His comment was that "it smells spicy, but it doesn't taste spicy". Can't wait to try this again WITH the shrimp & crab boil.

I love my insta pot I just purchased a air fryer lid for it and it's amazing dont have to worry about searing meat I can brown and cook right in the insta pot

Holy $%!@, I am making this and some rice!!! We got the Instant Pot and the air fryer lid recently and have been checking them out. Jeffrey, your cookbook is spectacular. We have already enjoyed a number of recipes out of it. The cabbage roll soup recipe is a personal favorite. I have always been a big fan of my Crockpot and am now learning to love the Instant Pot, thanks to you!
Made this on Sunday and it may be my new personal favorite Instant Pot recipe. The kids and the wife also seemed to enjoy it. This recipe paired perfectly with some sticky white rice out of the rice cooker.

Salting the onions also brings the juices from the onions also and deglazes instantly be good over mashed potatoes also

You will love your IP. We have 3. The best invention I have ever used! And, they should ALL be sold with Jeff's cookbook because he really is THE BEST. I have never made a bad recipe and I think we've made about 80% of them. Restaurant quality food. We used to go out a lot, now almost never. :)

I made this tonight and it was AMAZING!! Only thing I did differently was I used skinless boneless breasts, added more beef stock, less sugar
and cooked it for 20 minutes! It was truly delicious!! This will be a weekly thing for me, I’m sure! Thanks for the recipe! May try it with pork tenderloin next time.

What you didn't use Boursin to it? You sure got me hooked on that! This recipe sounds so good, but I don't think I would use the Zatarain's concentrate, just to buy it for this dish. I have not used banana peppers before, so that's new to me. Will try that though. All I have tried of your recipes have been the best! Keep up the good work. Your the one that got me started with the IP, and Beef Stroganoff was the first thing I made! Yummmm!

I was on the fence about making this one but my man loves banana peppers. Made it tonight and it was really goood! Something about the vinegar in the pepper juice mixed with the brown gravy made it pop but not too strong. I did only used the 8 oz of peppers added before pressure cooking and left out the rest. Def going in my recipe book and def making often.
I'm loving your book, such great information on top of your recipes. Also, a HUGE thank you for recommending the Ekovana pans. Not a day has gone by that I haven't put them to use. Breakfast is so much better now!

Is it OK to substitute chicken broth for the beef broth?

Been watching a lot of your recipes. Just finished watching your Mississippi pot roast video, these were the 1st 2 times I've seen you use butter and flour to thicken things up VS your cornstarch and water slurry. Why the difference?

I was always told to never mix chicken and beef together. But in here you added beef broth to the chicken. Can you tell me why you used beef broth instead of chicken?

Beef broth has more flavor and pairs better with the AuJus is what I'm assuming.
@@GoldenChocolate100 that maybe so. But again the two can be a problem. While working in a restaurant we were told that the two different bacterial from chicken and beef can cause illness. Each had their own separate shelves for storage. Same for cooking. For extra flavor turkey broth would work. It is stronger in flavor. I do understand what you're saying. I thought that too.

Sounds delicious but if the goal is no beef then beef broth and au jus doesn't seem to be consistent. Are there any options to use other ingredients ? Chicken broth I think would work but what about the au jus mix?
I made it tonight with chicken broth and turkey gravy mix because it was already in the pantry. Turned out great. Can't compare to the beef version yet, but it worked just fine.
Why didn't you use chicken broth?
Beef broth goes better with Au Jus is my guess. I wondered about that, too.

Why do you put the peppers in at two different times?
This recipe has a lot of unique components. Can someone please tell me what it tastes like. I cannot figure it out. Thanks.
You have to try it, it's hard to describe. You can't tell there are banana peppers in it, it just has a unique taste. I will tell you that it is amazing, however. Both this and the Mississippi Roast recipes are wonderful. You won't be sorry you made it.

Is there any way you can do a mini-recipes series? I have a 3qt and live alone. I couldn't find ANY videos on cooking for one, or even two-person small serving recipes. All of these 8 and 6 qt recipes are too much for me and I have limited freezer space; I made quite a number of your recipes in the past...all great, but now...with my house now empty of eaters...the recipes are way too big. The math to reduce just doesn't seem to work out right. If you can't, can you recommend anyone that does on youtube?
I just made this for myself tonight in my 3 quart IP. I used 3 chicken thighs and 50% of everything else, followed all other directions. It's delicious and a ton of 'gravy' left to have over noodles etc. I have cut many of Jeff's recipes in half and made them in my 3 quart.

It would be nice to know how many servings your recipes make. I don't do leftovers in my house - my son won't eat them. Since, I'm no longer working, I don't have the need to take a lunch so, leftovers don't get used. Your recipes, while delicious sounding, are too big for my house so, I would like to know the number of servings you feel the recipe with serve so I can adjust it to suit my household.
I would say the 'as is' recipe is at least 6 servings. I made this tonight with 3 chicken thighs and cut everything else by 50%. I have an 8 quart IP but made this in my 3 quart . it's quick, easy and delicious.

The only way to answer that is to say that Jeff's are ALWAYS better. I have replaced a lot of my recipes with Jeff's because he's just got that knack of making anything better.
