    Made this tonight as my peppers were ready to pick. I used seven and put them all in. It was just the right heat for everyone. The ones that like it hotter have the option to add more heat after cooking. I opted to serve it over rice and oh my, it is delicious! I should have worn gloves as my left hand is burning. But it was worth it. Another winner!

    Jeffrey thank you so much I am all about low carb this over cauliflower rice is an excellent dinner, dip using No grain tortillas chips. I have an instant pot and look forward to anything you cook that I can eat! Thank you for trying to keep us all included… Love it

    Hey Jeff, if you haven't noticed the trend in the comments yet, this is a GREAT recipe for the Keto diet. Keto + Instantpot is a popular combo.
    I already do lots of your recipies, only replace the corn starch slurry with some xantham gum, and sometimes cut the onions in half.
    Just figured I'd let you know since I'm guessing, although very niche, lot's of us High Fat, Low Carb people flock to youtube for recipies!

      If you cut the broth down some after cooking but before you add in the cheese, you may not even need the xantham gum. I made this recently and found that this method worked really well over some cauliflower mash and wasnt thin at all.

    I just made this recipe and it is absolutely delicious! I put a little extra broth to give it some more sauce and I poured it over some egg noodles. Everyone loved it! Amazing recipe!

    A friend of mine uses a grapefruit spoon to seed and devein jalapeños when she cooks. A great tip. Been doing it that way now for years.

    Just started to watch, but have a hint...use the tip of a teaspoon to scrape out the ribs and seeds of the jalapeño half, much more efficient 🙂

      Yes using a small teaspoon under running cold water will clean out those seeds and membrane very nicely

      Lisa Beets I use a small grapefruit spoon to clean out the seeds from small peppers like that.

    Just made this, I have to say, bacon is the star of this dish. I think it's because the veggies are sauteed in bacon grease, but the bacon flavor stands out the most. As a bacon lover, this is a good thing. Love this dish!

    pickled jalapeno for garnish instead would add a little acid to balance the richness

    You can use a small teaspoon to hollow out the Jalapeno as well, works great.

    I’d eat this with a big pile of tortilla chips. Eat the chicken, and then scoop up all the sauce with the chips. A little frozen margarita, and it’s a party!!

    Awesome! Love seeing a recipe I can eat on low-carb. This one’s getting layered over seasoned cauli-rice. I agree with Richard- a little diced tomato (or even pico de Gallo) sprinkled in would be prefect! Then it becomes “loaded jalapeño popper chicken” 🙂

    Thank you SO MUCH Jeff! I made this but I added brown rice in (already cooked) at the end to help soak up some of the liquid and capture some of that AMAZING flavor. This was SO AWESOME! I immediately went on Amazon and bought your cookbook. It's GREAT by the way. Excellent job all the way through! I bought the spiral bound version because it's so easy to use while in the kitchen. You Are The Best!!! Please keep up the good work!!

    Likely fantastic on a prepared baked potato mashed and cut, buttered and salt and peppered then add on top!!!!!!! Meal in one, gotta try it!!!!!!!

    Anytime somebody points with their fork like Richard did, you know it's delicious. It's because they're so excited to say it's delicious, but their mouth is full (or it's too hot) so they have to wait, so they wave their fork at it. I know, I've done it too.     One question though - why adding the spices after pressure cooking?
    One more thing - if you haven’t bought Jeff’s cook book, run to the book store and grab one! It’s the top 1 of every cook book I’ve ever owned! I keep it at my bed side table for inspiration to the next day. I’ve tried dishes I never thought I would. And they all turn out amazing ❣️🙌🏻
    It’s so easy to follow and it made me totally in love with my IP. Thank you, Jeff❣️ My family now eat a lot more versatile than ever🙏🏼👍🏼😍 And it has helped me fill up my freezer with finished meals that are just great to reach for those days when I don’t feel like cooking👍🏼🙏🏼😍

    Man this looks so yum!! I cannot wait to try this. We love jalapeño poppers with our BBQs here in Texas. And this let’s us have it as a meal! And think for those that are meal preppers out there, you could make this and freeze ahead of time to pull out for dinner at a later date! Genius Jeff!! By the way got your book when it first came out..... LOVE IT!! And yes I am a picture step by step person. So thank you so much for doing this! Hugs buddy 🥰

    12:21 Richard is on to his second bowl, I guess he likes it! As a Richard Myself, and a huge jalapeno Popper fan, I am wondering where is the breading or crunch? Carbs? YES! Mayeb serve with mozzerella sticks if you don't care about your heart health or just some garlic coutons...?LOL! I am Glad to be a Richard as my father was a Dick!(By choice)!
