Double Smoked Ham with a Pineapple Bourbon Glaze

- A Simple and Delicious way to take a fully cooked Ham and Double Smoking it and adding a wonderful Pineapple Bourbon Glaze.
Ingredients:
Spiral Cut ham or any pre-cooked ham.
18 oz. Pineapple Preserves (Apricot, Mango or Orange)
1/3 cup Dark Molasses
1 cup Honey
1 cup Bourbon
1/2 cup Brown Sugar
2 tbsp. Dijon Mustard
1/2 tsp Ground Cloves
Smoke for 4-6 hours at 225-240 degrees Fahrenheit or until ham reaches a temperature of 130 degrees. Apply Pineapple Bourbon Glaze 3-4 times during the last hour of cooking, bringing temperature up to 140-145 degrees. Slice and Enjoy!

you could probably cut alot of time just by pulling the ham out of the fridge and let it come to room temp before putting in smoker, just a thought
That certainly would shorten the time needed to heat the ham up, but smoke sticks to cold and wet meat better, therefore I put the ham in cold. Thanks for stopping by!

Yes, smoked and fully cooked.
I'll be smoking a 10 pound smoked (pre-cooked) ham as well but not spriral sliced. Basically, I wanted to see a) how long it took to cook 10 lb ham and b) how you made your glaze. I'm thinking 250-275F might be a better cook temp rather than the 225F you started with but I really wish you had mentioned how long it took you overall to get the ham to 135F internal. I'm "guessing" it might take about 3.5 - 4.0 hours to get 10 lbs to 135F if smoked at 250-275F. Does that sound about right? The glaze I am definitely going to try!
I think I smoked it between 3-4 hours, cranking up the temp during the last hour and a half when I realized how long it was taking to bring it up to temperature. I hope you enjoy the recipe, good luck!
Going to try smoking my first ham tomorrow for Thanksgiving and going to use your recipe. Well done video. Will be using Jim Beam in honor of my dad, although he probably would have said that it would be alcohol abuse to use bourbon for anything other than drinking! Probably going to use apple wood chips. I'll let you know how it goes.

I am going to give this glaze a try! Using 18 oz jars of Smuckers Pineapple Preserves, Grandmas Original Molasses and Krogers Private Selection Raw & Unfiltered Wildflower Honey and Makers 46 Kentucky Bourbon. Cooking 2 Hams so I will increase the amounts. Thanks for posting!

Only one cup bourbon? I use 2, one for the glaze and one for me. I'd add just a pinch of cinnamon to the glaze. The ham looked great Eric. Thanks.

We don't drink can we use something other than bourbon, like vinegar? The ham looks great though. Can you slip me a couple of slices through the computer? LOL
If you keep opening the door it will never cook. I fill the pan 1/2 way with apple juice, pineapple juice and ACV. Let it go!!!
Here is where I tell you the obvious, but I guess you need to be told. I am filming a video. If I was not filming a video I would not open the door as much, as the need to open the door would not be there. I am trying to show people how the ham is looking and progressing throughout the cook. The video wouldn't show or explain much if I put it in, closed the door and then it was done without any additional footage. So for that reason I open the door to show people.
