How Italians Stay Cool | Cold Italian Dishes for a Hot Day
Things are REALLY heating up here in Arizona: a fact which Eva loves but I'm not exactly thrilled about. Luckily, Eva has a handful of refreshing, COLD Italian dishes that are perfect for a scorcher.
And, while we're on the subject of the Arizona climate, it's probably time for us to reveal why we moved here from Maine...

@@yuzan3607 : you're right, they grow rice below Lisbon, at Sado river (around Alcácer do Sal, south from Setúbal), and also along the Mondego river, mostly. it seems rice has been grown in southern Portugal from the moorish era (after the roman era) and I assume most traditional portuguese rice dishes are from the south of the Tagus river. Among them, tomato rice cooked with red beans ("arroz de tomate à moda do Sado"), "arroz malandrino", (close to the famous venetian "riso all'onda" I'd say), "arroz de cabidela" (rice with giblets), "bolo de arroz" (rice cake), "arroz doce", are well known through the country.

@@sbowyer525 sauce is easy: light-fry in few spoons of olive oil (better if extra-virgin) the finely shredded breadcrumbs until golden brown. Around 3 and1/2 min on medium heat stirring occasionally. Put aside. Turn the fire on again and deglaze the same pan with one or two sips of white wine. When the alcohol has evaporated, pour into the pan again some olive oil and the anchovies, low heat. The job now is to dissolve the anchovies into the oil and that's the base of the sauce. You can add some finely sliced fennels at this point to your taste. You can light fry in the pan a clove of garlic as well while melting the anchovies if you like garlic. Cook the pasta normally, drain and pour into the pan with the anchovy sauce. Low heat, stir and let the pasta absorb the flavours. Turn off the heat and finally mix the pasta with the "muddica" (breadcrumbs) before putting into the plate. Genuinely Sicilian, enjoy.

The passata I had was not the highest quality tomatoes, so I added some tomato paste and reduced it with the garlic, basil, oil, like the recipe says. @@JohnnyV83 There's nothing to be terrified about grapes grown in Southern AZ. See the links below to satisfy your curiosity.
Sonoita Vineyards in Southern AZ is very good. See www.sonoitavineyards.com/ . I lived in Tucson from 1997 to 2002, and I had some very good wines from Sonoita Vineyards.
From the "About Us" link on Sonoita Vineyards website: "Aided by the unique growing conditions of the Sonoita Appellation (AVA - American Viticultural Area), the winery consistently creates award winning wines, including a Cabernet Sauvignon chosen by national wine critics to serve at a Presidential Inauguration Gala. Perched at an elevation of 5,000 feet among rolling grasslands, the vineyard is surrounded on three sides by soaring mountain ranges...
Every bottle of wine is hand bottled, labeled and capped in small batches at less than 2,000 bottles per vintage. Our grapes come no further than the Southeastern Arizona Region with the majority of wines being vinted from estate grapes...
The grape varietals grown at Sonoita Vineyards are Chardonnay, Mission, Merlot, Cabernet Sauvignon, Syrah, Petite Sirah, Sangiovese, Sauvignon Blanc and Pinot Noir. In 2013 we planted on Malbec, and in April of 2017 we planted Tannat.
Certainly there are challenges to growing fine wine grapes in the climate of the American Southwest, but Vineyard Manager, Robi Reynolds, takes advantage of the benefits this region offers."
You can book tours of Arizona Wineries here: www.arizonawinerytours.com/ , featuring wineries in Sonoita, Sedona, and Willcox.
There are many other fine wineries in Arizona as you can see from the list of the 2018 Arizona Wine Competition award winners at this link: www.azwinefestivals.com/awards.html

You could also try cinnamon jello from Sicily. I have two easy recipes for salads. One involves a salad of your choice with a whole burrata on top. Slice it open. You then put cracked pepper and olive oil on top of the burrata. The second recipe involves slicing fresh tomatoes and small mozzarella balls. You alternate to cheese slices and tomato slices. On top put fresh oregano and basil. Sprinkle with olive oil. Cover and put in fridge for three hours. The longer the marinade, the better it tastes.
