Things are REALLY heating up here in Arizona: a fact which Eva loves but I'm not exactly thrilled about. Luckily, Eva has a handful of refreshing, COLD Italian dishes that are perfect for a scorcher.
And, while we're on the subject of the Arizona climate, it's probably time for us to reveal why we moved here from Maine...

Yes, my family is from the Piedmont. We do not eat as much pasta more rice and polenta. As much butter as olive oil, ..
@@philipcone357 The rice grown in Italy is so good. Several different varieties. The par boil Eva mentioned is excellent too.
The portuguese also eat a lot of rice. A lot of their traditional meals are with rice, and I think they're masters at rice dishes.
I'm one of those rare people who doesn't like pasta. So, I'm looking forward to try Italian rice dishes when I go there.
@@yuzan3607 : you're right, they grow rice below Lisbon, at Sado river (around Alcácer do Sal, south from Setúbal), and also along the Mondego river, mostly. it seems rice has been grown in southern Portugal from the moorish era (after the roman era) and I assume most traditional portuguese rice dishes are from the south of the Tagus river. Among them, tomato rice cooked with red beans ("arroz de tomate à moda do Sado"), "arroz malandrino", (close to the famous venetian "riso all'onda" I'd say), "arroz de cabidela" (rice with giblets), "bolo de arroz" (rice cake), "arroz doce", are well known through the country.

I know exactly how hot Arizona is... visited there years ago! Stay safe and drink lots of water, it can pretty much turn into an oven really fast.

@@qtcore2200 We Italians use "mozzarella", in addition to the question of color, also to define a weak person, without character, unable to do certain things.
So, if someone in Italy tells you….”Tu sei proprio una mozzarella !” (You really are a mozzarella !), it is not really a “compliment” ! 😉

The Insalata di Riso that my friends from Roma make is basically the same as this recipe except they mix in mayonnaise. It’s a super versatile dish!

I'm from Milan and I was shocked, years ago, when I discovered that some people put mayo in their insalata di riso XD I guess it's more common in Rome, but for me it was the first time in my life I heard about mayo mixed with rice

Sicilian episode - yes we all would like to see that. Of course, when you return to Italy you could also go to Sicily, visit the food markets in Palermo, do a whole series on Sicilian food. That would be even more amazing!

I am half Sicilian half Irish and since my family’s Sicilian recipes have been Americanized I’d be excited for a Sicilian episode just to see what you do and if there are any similarities with the food I grew up with.

I am half Sicilian as well. My grandmother used to make a spaghetti dish with anchovies, fennel, and breadcrumbs. I don't have her recipe and have search a lot! I found one called Pasta Ca Muddica. Have you ever tried or know about it. So simple - so good. I can private message on what I have, but I wanted to know if you had the real deal. Love your channel!

@@sbowyer525 sauce is easy: light-fry in few spoons of olive oil (better if extra-virgin) the finely shredded breadcrumbs until golden brown. Around 3 and1/2 min on medium heat stirring occasionally. Put aside. Turn the fire on again and deglaze the same pan with one or two sips of white wine. When the alcohol has evaporated, pour into the pan again some olive oil and the anchovies, low heat. The job now is to dissolve the anchovies into the oil and that's the base of the sauce. You can add some finely sliced fennels at this point to your taste. You can light fry in the pan a clove of garlic as well while melting the anchovies if you like garlic. Cook the pasta normally, drain and pour into the pan with the anchovy sauce. Low heat, stir and let the pasta absorb the flavours. Turn off the heat and finally mix the pasta with the "muddica" (breadcrumbs) before putting into the plate. Genuinely Sicilian, enjoy.

Here in Portugal, I cook something very similar to the rice salad! Tuna, hard boiled egg, ham, sliced hot dogs, and then we can add any vegetables you like. I love to add sweet corn, tomatos, anything you have in the fridge! And you eat it cold, lovely to eat on a hot summer day! 🤩
I am Portuguese also and I have never seen any recipe with hot dogs. I would use choriço.

The most popular summer dish in central Italy is "panzanella"
Better you than me living in that hot climate. I'm originally from Southern California where the summers were hot enough to fry an egg on the cement. Not for me. Moved to Virginia which I loved, but the summers were awfully humid. Then to Greece where the summers were deliciously tropical, but again, too sticky and hot for my taste. Then to the Netherlands where we have perfect (mild) weather (for me) all year round. 🌹
I would assume it was cold af in the Netherlands. I was raised in PA then spent almost 30 yrs in AZ, yuk. Missed PA but not the snow. Now I'm in San Diego but considering Hawai'i! or a skoolie!!
@@idowanna837 I love Hawaii, but again, it's too hot and sticky for my taste. Here in the Netherlands, the climate has become pretty much sub tropical due to the climate change, which is far less cold than in the olden days where we could look forward to skating on the canals. To ME, it's perfect, simply because it's mild weather.💞 P.S. I wouldn't move before having experienced all of the weather patterns first. 🌹
@@LindaCasey I've been to Hawai'i once, it's pretty much 80 all yr round. I don't think the humidity is much worse than here in SD but nothing compared to TX where I have visited family, NO THX! If I'm ever able to make it to Europe I will keep the Netherlands in mind

When I visited Catania with my family a few years back, we took a cooking class. My favorite Sicilian recipes we made were Pesto alla Trapanese and Caponata. Would love to see these dishes in a video! Also, the Spigola was insane!

I recall that when they did their cross country trip, Eva really liked Arizona because it was hot and reminded her of home. She got some good Mexican food there, which is not a thing you really find in places like Maine. She really liked authentic Mexican food because it's spicy like her Calabrese dishes.
I think she even kind of joked that Calabria is like the Mexico of Italy.

I’m in Texas, so glad to have some new options for summertime. With all the southwest ingredients at your disposal, I’d love to see a video about spicy peppers as ingredients. Calabrian Chili, American alternatives, things like Bomba sauce, etc.
I always have wanted to try Rice Salad. So you inspired me. It was wonderful! Double YUM! I was not eager to taste ham and tuna, so I started out with only ham. But it was lacking something. So I added the tuna as the recipe required and was glad I did. The tuna did to the Rice Salad what anchovies often do to a sauce or a salad. WOW! Grazie!
Everyone’s saying that Harper is so lucky to have a person like Eva, but to me here the lucky one is Eva! Hoenestly, guys, how many Americans do you know that they would change their whole lives and routines just because their partner couldn’t handle the cold of Maine? C’mon. And this is an Italian speaking who moved to Cali to be with her loved one at 18 years old, four years ago.
That's why I pray my soul mate likes the same weather I do. I don't want him being unhappy just so I can be comfortable with the weather I like. I want us both to be comfortable.
I love watching you guys and getting a glimpse of my heritage as an Italian American. Please show more Sicilian food! I grew up with a Sicilian Grandmother who learned how to cook from her Napolitana sister in law, so we don't have very many authentic Sicilian recipes in my family. In México, lot's of moms cook hot dishes even though the weather is hot as fk. They tend to inaugurate summer with a hot caldo. I feel Harper when he wants something cold to eat.
Well, if getting a hot shower in summer to feel the hot air after that "fresh" and not uber cold anymore works...maybe they thought to do the same with food? That's the only reason i can think of about cooking hot stuff in summer
@@sasuke65743 As a Mexican, I think the reason they cook hot caldo ("soup") during the summer, is because, usually when you cook the kitchen gets very hot, specially during the summer, and while you're cooking hot caldo (soup) you don't need to be in the kitchen while it cooks, so they go to their rooms with the AC to wait for the food to be ready.
@@rafaelnarcio9997 normally with soups there is less prepping and less burners used since all you need is 1 burner.

I hate the extreme heat. I now live in Kentucky and the heat and humidity kills me. I could never move more South, or to the southwest. Yuck. Miserable
Being so far from the ocean would also bother me. The nearest ocean is in Mexico.
Different strokes for different folks. I can't stand the cold. Living in Arizona for 12 years now and my blood pressure is back down to normal levels. Perfect actually. Cold ain't good for you.
Arizona is awesome most of the year. May and June is rough but after July the monsoon season starts. Awesome evening storms to cool off. Oh drive up Mt Lemmon to cool off or Flagstaff.

Up here in Minnesota we look like Mozzarella too. I would call that dessert Watermelon Pudding rather than Jello. Here in MN Jello is a salad. ;-)

You look so white like a mozzarella is my favorite line 😂. Also I just made your simple tomato sauce for the first time yesterday. The passata I had was not the highest quality tomatoes, so I added some tomato paste and reduced it with the garlic, basil, oil, like the recipe says. By the time I was done making it I realized I had eaten almost half of it with just a spoon or on bread. So. So. Good.

You could also try cinnamon jello from Sicily. I have two easy recipes for salads. One involves a salad of your choice with a whole burrata on top. Slice it open. You then put cracked pepper and olive oil on top of the burrata. The second recipe involves slicing fresh tomatoes and small mozzarella balls. You alternate to cheese slices and tomato slices. On top put fresh oregano and basil. Sprinkle with olive oil. Cover and put in fridge for three hours. The longer the marinade, the better it tastes.
You'd move to the Sahara for those dishes and she moved to the north pole to cook them for you💙

“Gelo” in Italian means “freeze”, while “jello” is something else.
Oh yes…. there is a big difference ! Sometimes these things happen when words sound similar in both languages. :)

For jello, think “gelatin”
Gelo is mean "frost" not freeze.
These dishes are really perfect for those who eat them on a hot summer day. For the cook, however, it is a different story: boiling / steaming water and hot oven - not really where one would like to be lol.
