      (Actually I find Eva sometime a little bit too snob towards American way of approaching cooking in general.)YOU FIND WHAT??????
      About 4 million Italians immigrated to America from 1880 to 1920. The majority (about 85 percent) came from southern Italy, where political and economic circumstances left the region extremely impoverished, so it would be the cuisines of Sicily, Calabria, Campania, Abruzzi and Molise (and not Venice) that would make their mark in the United States.
      After all, Americans are messing with their grandma’s grandma’s grandma’s recipes.
      What passes as “Italian” in the US has been an exercise in patience for ITALIANS!

    • @jensmoellenhoff
      @jensmoellenhoff 3 роки тому +3

      @@luked4043, it is called that for several reasons. First, many buildings were built by Italian architects that have been hired from South of the Alps. In fact, Munich's first opera house was built on the insistence of the Italian wife of some elector back in the 1650s. From 1810 on, Turin chocolatier Luigi Tambosi opened his famous café in Munich -- and it's still in business! In 1890, the first Italian restaurant, the Osteria Bavaria (now Osteria Italiana) opened in Munich's university quarter in Schelling Street. Of course many more followed after WW2, when many Italians were hired to help rebuild Germany after the war. Of course these workers did not only enrich the culinary scene, but also added more than just a pinch of the oft-quoted "dolce vita". Also, many Munich artists, musicians, writers, and other cultural figures drew their inspiration from Italy. That is probably the most important reason for Munich's nickname, because it is culture that forms the way of life of a city most significantly. I don't know if I would love my city as much as I do without all those Italian influences. Maybe it would be just another Bavarian provincial town. Which would be okay I guess, but I like my Italian Munich better. :)

    LOL! Italians always have two kitchens! Both my grandmother and my mother had a basement kitchen in their homes. I'm trying to convince my husband we need a kitchen in our basement. He thinks we should do an outdoor kitchen. I said we could do that too! I would totally buy Ava and Harper's cookbook. Brings back memories of my childhood from Piedmont to Chicago.

      Today it is less common, but in northern Italy, up to 30/40 years ago, every farmer who had grapes prepared his own grappa by distilling the marc.
      It was illegal and could be dangerous because the distillate originally contained toxic concentration of methanol.
      Thus it was said that to make a good grappa one had to throw away the head and tail and keep only the heart.

      As an Italian who loves to cook I get asked the same question all the time - - the answer is good food, nutritious and well-prepared, is satisfying. And so one does not eat endlessly looking for a satisfaction that eludes us. Also notice the scant use of sugar and the absence of any highly processed food.

    • @cristianobarbaro3296

      Outside of America people use fresher foods. Straight from gardens. Its more nutritious and safer than the food we eat here in America. Our food is genetically modified, a lot of pesticides are used, and the cooking uses so much salt, sugar, and fat. And then there's the awful packaged, canned, frozen, and fast food. Whenever I would go back to my home country in Europe I would lose 10 or 20 pounds, and whenever my relatives would visit the states they would gain 10 or 20 pounds.
