I didn’t realize how little of the coconut was edible! I thought that whole shell part you cut off was good meat. Now I really know what a coconut looks like chopped up and served properly!
Coconuts on trees grow in big, fibrous protective casings called "husks." When fully ripe/dry, the husk dries and peels away to the small brown coconut you'll commonly see in stores. What they're cutting away in the video is all husk on a younger, less ripe coconut, because they're sweeter and better for drinking. Around 1:25 you can see a faint brown line around where he's cutting, that would be where the shell of the brown coconut starts if it were fully ripe!
If you want a lot of meat, you can try a Macapuno coconut, the flesh on those is softer, is like 5-10 times thicker than a regular coconut and the liquid inside is of a thicker consistency almost like jelly
Its not just the coconut peeling skill here that's impressive. Its also the ability to spot and pick the coconut at the right age where it can still be cut like this. Too young and the meat will be too thin and fragile. Too old and the meat will be too tough and attached to the pit too much.
