Is there a feedback cycle from customer in Waterfall , other than the one at the end - closure of Project ? Saket , Is there a video on complete Agile SDLC including documentation like Traditional PM approach ?
Waterfall needs to be designed with feedback cycle, unlike Scrum , waterfall does not have certification or any recommendation so it depend on how we design. The PMP program helps in learning how to design a process which helps in delivery value.

The high level answer would be by having good collaborative and trust based relation, and ensure the vendor has clear expectation set for sharing work information regularly.
I think you can share some of the risks you identified and managed in recent time, its good to have specific risks. In general software projects has risks related to estimation errors, misunderstanding of requirements , unproven technical choices, lack of knowledge transfer.
