Good question- since hydraulic head energy is completely dependent on a height above some datum, we can factor out the other variables that would make it a conventional energy unit. That way, it's easier to explain and understand head energy in terms of height.
Correct me on this if I'm wrong but I think it comes from the idea that energy is in Joules or Newton-meter. And by simple algebra, dividing Joules by weight (Mass times gravity of simply, Newton) would result in meters. In summary Joules= Weight((z+(v^2/2g)+p/gamma)) meters = z+(v^2/2g)+p/gamma
