Very likely you have commented on a few things I'm curious about, but for the benefit of all of us who haven't yet seen every video, could you please answer a few things? 1.) Do you have a satellite phone on board? What about a long-distance radio (HAM, short wave) or just the ship to shore you use to talk to nearby boats? 2) From what I've seen so far, you guys seem to stay relatively close to shore (perhaps a days sail/cruise or less). Is that generally the case or do you/will you do some long, remote, open water trips that will be days from land? 3.) How long have you guys been out there, and how long do you plan to stay? 4) What kind of work do you both do in "the real world"- specifically, do you work in the sailing/boating industry in some capacity? 5) Do you sometimes dock the boat and spend a night or two in a hotel or air B&B on land? 6) In a few videos I've seen you wearing masks or handkerchiefs over your mouths and noses. Is that because of dust, or sun protection, or something else? If any of these are too personal then of course ignore them. If you've answered then 1000 times already, we'll understand. I have to tell ya. Up here in BC Canada and as a commercial trolling fisherman I haven't used a hook without crimping the barb in years, and I don't feel I've missed a fish. well pretty close anyhow. THe great thing about crimping the barb back is you can release the fish ---- sooo much easilier, saving many more fish from death and terror. Commercial trolling for salmon and ling cod was made simple for us with crimped barbs as it made it way easier to release by-catch. You should give it a try.
that sounds like a good combination for brine for your fish. the age old rule for brine is: add salt to cold water until an egg floats. and then add other ingredients to taste. Old timers typically limit it to brown sugar. myself i enjoy honey, sometimes teriyaki sauce, even some spicey hot sometimes. Miniumun of 8 hours soak, preferably 24 hours (depending on the thickness). and then rinse. be careful not to rinse all of the salt out. getting the salt throughout the meat is important. the thicker the meat, the longer it needs to soak. the key is 100% saturation throughout the meat with the salt. smoked fish has two important preservatives, or three depending on how you view it. 1. salt. helps preserve the meat and is incredibly important. 2. Smoke. that's why cold smoking works so well, the longer you smoke it, the more the smoke penetrates the meat, therefore the better it preserves it. (remembering sugars are counter productive, even though they really create the great flavors). 3. air. the air circulation after cured help preserve it also. just like anything. trapped damp air causes growth. traditional smoking is strictly cold smoked with no heat, just smoke and spends as much as several days absorbing the smoke into the salted meats. of course, salt alone can preserve meat, but only for cold storage, hence an ol southern american favorite "salt pork" or the asian favorite salted chicken. Myself i start my smoking out at about 100 degrees Fahrenheit. and slowly increase it and spend the last 2 or 3 hours at about 180 Fahrenheit therefore the meat is cooked, smoked and salted for preservation. cooking it faster is a smokey flavored cooked meat, with salt. depending on the thickness. very thin meat requires very little smoking time. the key is that the smoke penetrates the meat 100% in order to be 100% smoked. and when those principles are followed smoked meat has a longer shelf life. thin meat i might finish in 8 hours, but typically such as salmon steaks/fillets i give it 12 hours, sometimes 14. I will say, yours looked scrumptious, and undoubtedly was scrumptious. adding green fruit wood really enhances the flavor. apple and cherry are the most common, but i think that's only because it's readily available in these part. I have experiment with others such as plum and peach and had good results. different woods can drastically alter the flavor, good, or bad.

lol. a tricky fish. all fish are a little tricky. Some more than others. I'm getting ready to take the plunge from land to sea life. I think I will love it. Hi guys, just found you'se been bingeing up to ep64 now but I just gotta let you in on a secret the sealed bearing (which includes any sealed bearing!!!).in the wind generator has little to no grease in it when replacing these bearings you need to use a seal picking tool pull the seal and pack the bearing with grease of your choice and I garantee it will be heaps quieter as you can tell the sound of the unlubed bearing is driving me insane, But apart from that am enjoying your channel immensely cheers
That mackerel looked so good. Been way to long since I had any and to think of the schools of them so big we couldn't see the end for hours. We would give them to everyone, I would love to have one given to me now, ha. Great video, again, just beautiful all of it.

Starship Troopers by Robert Heinlein was a fave of mine as a kid. I had almost all of Heinlein's books and anthologies of short stories. Must have missed the Storm Troopers director's cut edition though ;)
