@@minhobrown170 Yes he has kids, he showed them in a video. And his origin is not difficult, he is very obviously french. He comes from Bordeaux. The rest can be read on his website, nothing mysterious.

Chef, I halved the ingredients for this recipe as I live alone. Even so there’s still a lot of dough, I have it in the fridge, would I be correct in thinking that the following day I do not need to use all the dough but can leave some in the fridge for another day. I am a novice bread maker but so far this dough smelt wonderful even after mixing. Thank you.

What oven do you use?
3:34 Warning: be VERY CAREFUL not to spill any cold water on the hot oven door or it might explode !!! I would boil the water before, so that the risk of explosion in case of mistake is reduced, and the production of steam in the oven is made quicker since the water is already hot.

I’d love your thoughts re pizza steel vs stone. I recently went to a steel distributor and picked up a 1/2 inch piece of plate steel. It works amazingly well for pizzas.

So I was scrolling through the comments and I see Bruno is very cool when he talks to people and even defending himself a really enjoyed the videos but the only problem is I live in Southern California and I don't understand the recipe over here we use like tea spoons and cups for measurements is or anyone that can help me with this the bread looks so amazing I would love to make some tonight for The following day please and thank you someone come to the rescue
Thanks for your inputs🌞. All of my recipes are going to be in metric system now and my new coming up website will be. The main reason is that baking is an accurate science and has to be dealt as such. That's how it goes in the culinary worlds anyway and I don't know why only America is still behind... even Mexico does metric. No exception - désolé 👨🍳👩🍳
Surely you have a kitchen scale? You can't go by volume with yeast and salt... you'll always be off and a little too much salt will kill your dough.

Bonjour!.. Ce n'est pas du pain de mie mais du pain moulé. Le pain de mie n'est pas du pain de tradition.. mais plutôt (de mie) serré qui contient des produit laitier et sucre. Ne confondons pas.

Where did you get yeast? I haven't been able to find any since we all went indoors!
My local Walmart has had yeast.
You can grow it yourself using apple water (an apple soaked in lukewarm water for a day or so), flour or other ingredients. There are recipes online.

Hey Bruno! I loved your video, wish I had a bread machine haha. Anyway just wanted to let you know your website appears broken on Safari for Mac. The navbar at the top is broken on the home page. I had to scroll all the way to the bottom to find the recipe link and when I visited that section, the website worked properly.

Hi Bruno, We’re out of yeast in our region 😷 so we made our own yeast starter (flour/water for several days)😀. Where/how much should we use that in the recipe?
This recipe is not based on starter. You would need yeast. Use dry yeast... it is widely available online🌞
Your starter would make it a sourdough, very different flavour. Check Bruno's sourdough bread recipe for that!
