- LAMB BACON! One of my all time favorites, it's a unique style as it's a cured and smoked piece of meat. It never fails to impress. This goes great on a charcuterie board, BLT, or even with eggs and coffee in the morning. I roll and tie it up as you'll see in the video to help keep the bacon moist, and to help the muscles from contracting during cooking. Also, I tried to add transglutaminase for this recipe but didn't work out as well as planned. nonetheless it is still very flavorful and aesthetically pleasing too!
Transglutaminase: is an enzyme that catalyses the formation of isopeptide bonds between proteins. Its cross-linking property is widely used in various processes: to manufacture cheese and other dairy products, in meat processing, to produce edible films and to manufacture bakery products.
Recipe:
2kg lamb belly
50g salt (2.5%)
5g Instacure #1 (0.25%)
30g molasses (1.5%)

I need to find a butcher that has cured lamb bacon to try. I am hoping to get a small homestead on which to raise hair sheep and ducks and ut would be great to be able to raise one's own bacon. 😊

Yeah there! You can definitely just oven roast it. It would be really delicious still. Two alternatives to getting the smoke flavor is liquid smoke addition to the cure mix probably a teaspoon to 5 lbs of meat. Or set up an indoor cold smoker under your kitchen hood. @ethanchleboski YT channel has a how to make your own smoker indoors video. Really good. Thanks for checking it out 👍👍👍

Would it help using a sous vide before smoking for the meat to homogenise better?
Yes I think if I vacuum sealed it for 24hours and then let it sit open air in the fridge it may have sealed better! Thanks for checking it out 🙏

Hi Tony yes, you can use sea salt. As long as it is sodium chloride, you're good to go.
Can you eat it without frying it? I like to eat smoked bacon without cooking it in the pan.

@@MatttheButcher no, but I figure it would change the texture, and bland the flavor.
@@zesticide1010 did non of that, I’ve used moo glue a ton of times but this is the first time I made a slurry and ended up not working. But when it does work (sprinkling it on dry) you’d never know it was there! No taste, no weird texture , with that being said you still don’t need it for lamb bacon
