Just a friendly correction, for kosher, use of certain cuts are important but not for halal. For example, you can’t use any cuts that touches to abdominal fat, such as belly, lower ribs or back meat adjacent to abdomen for Kosher bacon, but these cuts are absolutely fine in halal.

amazing video, but half a teaspoon of prague powder for such a small cut is a little excessive, theres a bacon cure calculator you can use, you put in the weight of your meat and it calculates how much salt, prague powder etc... to add. Great video regardless

Thanks! Yeah lamb i think should be more widely used... We lean a lot on one animal for a lot of things- this is a great way to get variety!
