Made this and it brought back memories from my childhood. My Italian immigrant parents would make this with a good Italian bread and tomatoes from my dad's garden. It is a heavenly snack or I would have it for lunch. I will try it with the beans for dinner but may puree them with EVOO and roasted garlic. Love your recipes!!!

Simple is always best.i have this for breakfast a few times a week with the garlic rubbed on the bread & i mash a little bit of avocado on top & i sprinkle with some dried oregano or top with fresh basil if i have some.

What people misunderstand about this is that there is beauty in simple dishes that uses high quality ingredients. The tomatoes used should ideally be from a local farm, grown in a region known for good quality tomatoes instead of the supermarket mass produced junk food. - the difference in taste and smell is massive. I mean look at the bread that he is using and I can assume the quality of the olive oil is also top notch. Personally sometimes I like to toast my bread and rub it with garlic before adding the tomato, oil and salt (mixture in the modern version). There is beauty in simplicity whichever perspective you look from, be it health, religious and philosophical which may stem from the psychological benefits of living a simple life (according to neuroscience I interpret as these simple foods doesn’t spike/waste dopamine as much especially for those of us more that are more sensitive).

It's called "Pà amb tomàquet" in catalan, cause has Catalonia origin (1884).
We usually eat it with Iberian ham, sausages, "tortilla de patatas" or cheeses.
But Carme Ruscalleda (a great chef) also recommends eat it with a piece of dark chocolate.😋
Yes!The Catalans were very clever and so that the bread wouldn't stay dry they dipped it in tomato so that we could make better use of it.

The bread can be toasted or dry. Then fresh tomato is rubbed on the bread. But the bread is not dipped in tomato. We also add olive oil and a bit of salt.
The daily breakfast of a good amount of Spaniards, where it is also called "psn con tomate" (Spanish) or "pa amb tomàquet" (Catalan).
