My peppers that I was tottttally going to chop up myself are yelling from the back of my fridge 🤣 I agree with "convenient" things like chopped salad and boiled eggs. I've had to give myself permission to buy those things because so often I was throwing food out. Still working on that.
Meal prep is so smart and saves you time in the long run and stress! Just knowing you have several meals ready to go will save you anxiety in the morning! Not to mention the money you save from not eating out! And we know that prepping isn't possible without planning! Once I started making my lunches in advance, I no longer worried about what I was having for lunch! When you take the time to plan out your meals, you will never go hungry again! Chef salad was a big thing when I started working. Besides all the greens, it was full of deli meat and cheese. The boiled egg garnish provided more protein! Avocado is another great addition with great benefits! Your salads look great and you customized it according to what each of you like. Thanks for sharing another great video!😍
I found a simple and easy way to cook hard boiled eggs in the instant pot Put them in and set the timer for two minutes then walk away when you notice the pin dropped put them in an ice bath this method. You don’t have to stand around and wait for five minutes and then another five minutes.

That's awesome! I'll have to try that too. I actually like to race myself. Instead of standing around for the 5 minutes, I see how quickly I can unload the dishwasher or clear off a table. ADHD brain at its finest!
Looks yummy! I like to add nuts, fruit (apples, grapes, peaches), dried cranberries and/or olives if you are looking for other ideas

I have been finding a chop box/ chopper very useful in making veggie prep easier and fast.
I actually have one of those but I always forget I have it- maybe because it's hidden in a cabinet!

Amazon egg slicer under $4. Slices and when I want diced I just turn the sliced egg and Ta dah!

I try to keep pre-prepped Pico de Gallo in the fridge to add to salad and other dishes for a touch of veggies in my meals.
