Pastry Cream Recipe (Crème Pâtissière) | Easy Vanilla Custard Recipe for Desserts

  • Classic Pastry Cream (Crème Pâtissière)
    Ingredients:
    1 vanilla bean pod
    175 grams milk
    120 grams cream
    60 grams caster sugar
    25 grams cornflour
    4 egg yolks
    30 grams cold butter, cut into cubes
    Process:
    1. Split the vanilla pod in half and scrape the seeds with the back of a knife.
    2. Place the seeds and the pod in a heavy bottomed sauce pan and add milk and cream.
    3. Stir on low heat and bring to a simmer.
    4. Turn off the heat and let it cool to room temperature to help infuse the flavours of the vanilla
    5. Fish out the vanilla pod, scrape all the seeds and milk + cream mix on the pod.
    6. In a bowl, separate the eggs and take the yolks
    7. Add caster sugar and cornflour / cornstarch to it and whisk for a minute till well combined and slightly pale in colour.
    8. Heat the vanilla infused milk and cream mix till it comes to a simmer.
    9. Pour gently into the whipped yolk, sugar and cornflour mix, a little at a time, whisking constantly.
    10. Strain this custard mix back into the saucepan. this will help catch any scrambled egg bits (if any) or the vanilla pod fibres.
    11. Turn the heat back on the lowest heat and whisk constantly. It will start to thicken up, when it does, cook for about 20-30 seconds and take it off the heat.
    12. Transfer to a bowl and add cold butter and whisk to emulsify. If you are using vanilla bean paste or vanilla extract, you will add that now along with the butter.
    13. Cover with cling wrap ensuring you touch the surface of the custard so that a skin doesn't form.
    14. Refrigerate for at least a couple of hours or preferably overnight.
    15. Once chilled, mix with electric beaters on medium speed for 1 minute.
    16 Use as needed. I will be using mine in Brioche Vanilla Custard Cream Donuts on Friday!

      Hey! You can use it as a filling for doughnuts (I have a video recipe for it just after I posted this one), fill it in eclairs or choux buns etc.
