    that kitchen full of green herbs and the scent of vanilla custard! towards the end, i could feel the warmth of the bowl filled with freshly made custard and apple crumble. this was great to watch; i don't doubt that it would have been even greater to taste. kudos.

    I love everything vanilla. Just bought some plump moist gourmet vanilla beans from native vanilla and am going to get started with this recipe.

      Aren't 2 vanilla beans in the bottle with the other spices like $65.00??? LOL! Seriously, why so expensive? I just can't bring myself to pay so much for 2 vanilla pods in that bottle! And I bake all the time! The liquid Madagascar Vanilla in the little brown bottle is plenty expensive.....I found it on sale for half price and I bought them all! There they are in my spice cupboard looking all pretty! But I'd much rather see the pods :-(

    Simply the best little custard! I make this too for banana pudding and use the left over egg whites for the meringue topping, ohh, have to make this soon!

    I grew up with my mum making seriously thick Bird's custard. Much as I love the real thing I always find that when people make real egg custard it always looks a bit thin for my taste. I'm weird I suppose but I don't want to simply put a line through the back of the spoon to check that it's done, it's done when the spoon can stand unaided in the custard which I suppose is technically crème pâtissière lol.

      The real thing is amazing. Honestly it will ruin your enjoyment of the cheap powdered stuff but I can't recommend that you continue not knowing the joys of real egg custard.

      Quickblood1 I honestly think jamie did a bad job with this custard, if you reduce the amounts of liquids and add a little bit more corn starch you will get a thicker custard. What he did just looks like a sauce.

      Toni Stark If you look at other custard recipes or creme anglaise ones they're all surprisingly thin IMHO. Perhaps it's a chef thing but I suspect those of us that grew up on the cheap stuff expect it a bit thicker. I mean look how thick the ready made stuff is, that's closer to my preference.

      the other thing to look out for is that it is straight off the stove and piping hot. most custards will thicken even more once cooled. mine does all the time and its made from scratch 😊 the other thing to note is using milk and thin cream. lets be honest, who thinks of healthier alternatives to custard anyway?? 😂

    if you didn't find the recipe on his website, see here:
    serves about 6 people
    500 ml single cream
    500ml milk
    5 tbsp sugar
    8 egg yolks
    vanilla
    optional: 1 tsp corn flower
    warm milk and cream on the stove. add vanilla to pot and let simmer for 5 minutes.
    whisk sugar with egg yolks until its pale and silky, if you want you can now add corn flower and mix it in.
    take a little of the hot milk and whisk it into the egs to temper them. then add the mixture to the rest of the milk in the pot.
    keep stirring in figures of 8 for 2-4 minutes. check the consistency by running your finger over the back of the spoon and if it leaves a nice clean line, it's perfect

    Vanilla bean is like pure gold in my house...every recipe that calls for vanilla, I use the bean... matter of fact I use pure grounded vanilla bean .. much easier and less expensive too ...what a difference. . Once you use the pure vanilla bean, you'll never go back to the extract...
    very tasteful. ....

    Pro tips: you can simply cream the yolks with sugar/starch and add your cold milk/cream right into them. Then bring everything up to precisely 170-180F (77C-82C)--this is the temperature at which diluted egg proteins will thicken. Guess-work isn't required, you just need a quick-read thermometer.

    great job, Mr. Jamie. I was making custard just now but didnt have the corn starch / corn flour but I just used all purpose flour and cooked it a bit longer. Its okay. Is single cream the same as half and half in the states?

    Better to disperse the corn starch into the sugar & beat into the yolks first, then add the cream mixture to this while mixing. It creates a better emulsion and consistency.
