    I met the boss the(not the young son but his old man) first time over 10 years ago when he still had the original store in the basement in Flushing . I'm happy and proud of him for his success today

    I'm a white middle aged guy from Northeast Queens. I used to go to his noodle spot, downstairs, in the Golden Mall. Before Bourdain. It was an experience like none other. Like I didn't belong, my secret. Not anymore. Congrats on your successes.

    Its really interesting about how the Chinese cuisine has expanded in authenticity in the US. I'm a caucasian guy who grew up in New York but in the 90's I met my Chinese wife and we would go around in Flushing and in Chinatown and eat at restaurants that catered more for Chinese people but as you said it was predomininently Cantonese cooking where as she was from Dongbei so we would hunt for a taste more from the northeast. In the late 90's we moved to China. We lived in the south for over a decade and now in Beijing for over that as well. I adore Chinese cuisine and have travelled all over the country trying different styles. I have to say Dongbei, Sichuan, Hunan and Xinjiang tastes are my absolute favs I can make Jiaozi and Wontons on my own but now exploring making my own hand pulled and DaoXiao noodles so I just wasnt to say thank you for this video helping me expand my cooking styles!

    This is my dream too. I love food and I always wanted to open up a restaurant that serves food from my hometown. The idea having all kinds of food from all kinds of places and cultures in one city is just marvelous. Let’s hope the restaurants in nyc survive this pandemic, and I’ll go binge eating for a week after this is all over.

    I live in NYC and I’m absolutely addicted to these noodle dishes. Completely changed my idea of what Chinese food could be. Probably eat at a Xi’an Famous Noodles at least three times every week. So far everything on the menu I’ve tried has been great, except maybe the white lamb soup thing, but maybe that’s just not my tastes. The TOFU soup of all things is delicious, though. The tofu just melts in your mouth and it’s all the perfect blend of sour and spicy.

    The part where he's washing the dough to take out the dough is interesting. I will visit this place next time I am in NYC.

      That's the process of making cold noodles. They wash the dough to get the gluten out leaving the wheat starch liquid behind. The wheat starch is steamed and cut into noodles. The gluten is also steamed but they add yeast to it to make it spongy.

    On a cold New York City winter night, we would go into the one on 23rd St and order the Spicy Lamb Cumin Noodles and it was heaven! Spicy, Meaty with the lamb, deliciousness in one pot. I would literally not share with my husband. It's so delicious! We've moved to LA now, but this was our favorite winter meal of all time.

    This food is just as delicious as it looks. Each location is just as good as any other and my hope is that they keep expanding until they’re everywhere, like delicious noodle Starbucks. Oh yeah, and the burgers, and dumplings, and soft tofu are wonderful as well.

      I would rather they not expand like Starbucks because I am concerned that will make the place deteriorate in quality.
      That and I think it's more special when folks from out of town find this restaurant and learn just how good it is.
      Hopefully it incentivizes tourists to consider it over Olive Garden.

    I'm addicted to the Xi'an Famous Foods branch here in Chinatown in NYC (there's about five throughout the city). I really love their vegetarian tofu soup dish--it's some of the best Chinese food I've ever had. And it's only $5 a pop!

      There's probably plenty. You just won't go to them. The holy law of Chinese food restaurants: for every Panda Express/takeout American Chinese food place, there is an authentic Chinese place operated by Chinese folks hidden somewhere in the city.

    Every visit to NYC, soon as the plane touches down I be makin' a beeline to the Chinatown location to have me some spicy lamb dumplings. Best in the world and with all the cumin & spices, you have to catch your breath it's so intense without being hot spicy.

    Sha lo-mein. I have had the ordinary type where I lived on the West Coast. Store noodles do not come close. This fellow's noodles are an order of magnitude greater. Hat's off to making it the right way. Ng-koi!
