Cranberry and Raisins Oatmeal Cookies

- These Cranberry and Raisins Oatmeal Cookies are so delicious and nutritious. With no added refined sugar, they are sweetened with dates, which are high in antioxidants and an excellent source of minerals.
Ingredients:
150 g oat flakes
100 g whole wheat flour
50 ml coconut oil
100 g dates, pitted and washed + 30 ml hot water
1 egg
1 tsp baking powder
1 tsp vanilla extract
50 g raisins
50 g dried cranberries
50 ml coconut milk
A pinch of salt
Instructions:
Preheat the oven to 180°C and line a baking sheet with parchment paper.
Melt the coconut oil. Chop the dates into small pieces, pour 30 ml of hot water over them, and let sit for a few minutes.
In a large bowl, mix the oat flakes, whole wheat flour, baking powder, and salt.
Add the melted coconut oil, dates, egg, vanilla extract, and coconut milk to the dry ingredients. Mix well until a cohesive dough forms.
Add the raisins and dried cranberries, and mix well into the dough.
Form small balls from the dough and press them lightly onto the baking sheet.
Bake the cookies in the preheated oven for 12-15 minutes, or until golden brown.
Let the cookies cool on a rack.
