    The interesting thing about this is it describes exactly the process for cooking snails (escargots) I learned when I was a student in France in 1964. Once you have the snails out of their shells (another story) this is the same thing, exactly. In France , we used to put the snails back into their shells, along with the garlic butter. That French bread is important too. Don't forget that.
