You missed it today. Got a very late start on making lunch. Lunch was not ready until 4 PM! I was making meatloaf and had some white button mushrooms. So, I made some meatloaf stuffed mushroom bites. Just used my smallest cookie scoop to fill the mushroom with a "bite" of the meatloaf. Top with a slice of pepperoni, press down and cook on the top rack of the oven at 350 F. I pull them out after 35 minutes, but am sure they can be ready in about 25 minutes. My "Meatloaf Mushroom Bites" are delicious and hold us over until the meatloaf is done. It is an appetizer and meal in one.!
Just make your favorite meatloaf and mix in the sautéed mushroom stems. Stuff the mushroom and top with a pepperoni. Cook and enjoy. I cheat, I use meatloaf mix and add some other stuff.
Vincenzo, seeing that plate at 2'03" that made me very hungry.... This place is so calm and quiet.... Unfortunately I can't visit it because I can't drive.... I am now wondering how these rooms are heated during the cold wintertime. Those gnocchi.... At the end of your video I am now even more hungry. I must have forgotten I watched that video. I saw my comment there. My goodness, my brother swears I make the best tripe ever. But tripe cooked in the pig cheek fat? Not sure I can compete. I may have to put some aside next time to try that style. Your mom is lovely.
