    I love the fact that we live in a world where a Spanish chef will prepare Argentine food in the British countryside on a grill named after a French dictator. If only a certain slightly less than half of my fellow Americans would view the world that way…

    Expecting perhaps exotic sun-drenched scenery and Spanish Cuisine, but, wait a minute, this is the Cotswolds (which is normally far from sun-drenched, apart from at the moment). Just joking, it sounds delicious both more flavour and interesting than a great deal of traditional British fare.

    One question, Chef. When I worked in a fine dining restaurant, ,the chef (a Maitre Cuisinier de France always highly salted his grilled meat, but never put ground black pepper on before grilling. He taught me black pepper burns at. normal grilling temperature imparting an off flavor to the meat. Instead, we roasted whole peppercorns and ground them daily. After the meat was fully grilled, we used the ground peppercorns just before serving. I still use this technique. What do you think of his view on the use of black pepper on grilled meat?
