Gracias for sharing this one and I did this one a little while ago, following all of your steps, and it turned out absolutely delicious!! I'm doing your Patatas Bravas again tonight and our taste buds are salivating just knowing what's coming our way. When I compare your recipe with several others, your one is definitely my favourite. I have always made my own Mayonesa but this one is perfect. Love your work and the passion you show while making all of these incredibly tasty dishes! BTW, whenever I cook any Spanish dishes, I'm always accompanied with one of my favourite Spanish Vermut!!! Salud Amigo 🍷
Great recipe for patata bravas. Instead of baking, I used air fryer at 375 here in Utah since we are higher elevation. I was never able to make aioli and was happy to try your trick. Thank you!❤
Thank you so much for this recipe, and especially the technique bit for the aioli. I have been using this for a while and it works great, and is absolutely wonderful!
Great recipe Omar , especially the quickest , easiest aioli I’ve ever made. We had them along side some pink iberico secreta bellota and gordal olives from a Spanish fine foods retailer here in Yorkshire. It was snowing outside , but it was summertime in Spain in my kitchen!
New Sub to your channel & I love it. I've viewed about 4 videos, couldn't decide which I would try first so decided I'd try all four. Thank you so much for sharing these amazing recipes with us.
Great recipe Omar! I made seafood paella based on your recipe couple of days ago, it was excellent. I had a pleasure being in London on one of your cooking classes years ago, it was a great experience. I'm still often using the marinade for poultry from your recipe we made then- Spatchcocked quail with a roasted nut sauce
Thank you for not frying! If there's something I hate to deal with making a spanish recipe it's the amazing amount of excess oil! :D I know you guys are sure used to recycle or something but I hate to have another bottle/bin taking place in the kitchen...Anyway, thank you for not frying :D
Hi Omar, I just subscribed after searching for a bravas sauce recipe and yours was best. Can you tell me how long will the sauce last if kept in a jar in the fridge. Un abrazo muy gordo desde mi casa en Essex.
I have a question about the tomatoes. On other videos for Patatas Bravas, there are Spanish people saying there is never tomato in the sauce. That it's just thickened with flour. Are these variations in different cities?
The original recipe didn’t have any tomatoes, since it originated in Madrid during the Spanish civil war and fresh products such as tomatoes where not always available people used long lasting products but since then the recipe have evolve and I believe in order to make it easier and in more amounts restaurants have include the ground tomato, also, the tradicional Madrid bravas don’t have any alioli, we call that a mix, and if you order a half and half you will have a half plate of bravas and a half plate of alioli potatoes but not mixed, on the other hand if you go to Barcelona they almost always add the alioli on top
Omar -"add a whole head of garlic" me - immediately smashs the thumbs up!

I saw the coriander (cilantro) being chopped but never saw it added. I assume sprinkled along with the chopped parsley.

Por supuesto!
@@thespanishchef gracias!!!
what substitute can I use for sherry vinegar?
I have a question about the tomatoes. On other videos for Patatas Bravas, there are Spanish people saying there is never tomato in the sauce. That it's just thickened with flour. Are these variations in different cities?
Yes there are differences. I have never seen this recipe like he is doing but looks good so will try something different.
Hey can we swap out the sugar for 'Honey'? :)
It’s 180 C or Fahrenheit.?
Love your cooking, Omar, but you need a small microphone to make yourself heard. The camera mic. is not enough. Saludos!
i made this my girlfriend, i think she might make me her husband ;) thanks bro
you know stuff man
Thank you! 30 years cooking Spanish food its a lot of experience jaja
Can you also make the aioli in a blender?
If you mean a jug blender, yes you can, but you will need to add the oil slowly so it emulsifies correctly. It's a completely different technique
can i use italian passata for sauce?
Yes you do
Que se puede usar para el alioli sin huevo crudo?
Con sous vide puedes pasteurizar El huevo, también.
@@DaveDVideoMaker gracias! Lo voy a probar así:)
@@AlfonsoVallarta gracias. Otra idea. 😊
Is Omar still a professional restaurant chef?
Yes absolutely. Except there is no restaurants at the present moment due to the pandemic. I hope you came and see us at Tapas Revolution.
@@thespanishchef Yes, I saw you on one of Gordon Ramsay's shows. I was wondering how you were doing
Dumb question…is it important to peel to potatoes?
Why use Italian Olive Oil filippo berio
I made it but it became so heavy.
That's why is a tapa. You share it with friends, in a bar while having a beer 🍻 and talking.
that seemed more a mayonaise than an all i oli
lol sure youtube expert, thank God you're here to tell us what's right xD
Poner alioli en las bravas no es muy madrileño, que digamos...
Eso es lo que pensaba yo.. aún lo ves en algunos lugares pero no me parece tan tradicional poner alioli
Pero es pura gloria juntar ambas salsas 🤤
Energy is expensive, fry those, it's gonna be faster AND cheaper... And better.
brava sauce ingredients at 0:33
Omar put a bit more Spanish vocabulary in to help people learning Spanish
Potatoes not nearly crispy enough
Then fry them, it's up to you. But that's a good way to eat healthy potato's.
Look to grease
