      Do you throw your oil away when you have used it once or do you "clean" it and use it again ?
      If you save it how do you get it to be so clean ?

      Try Greek yogurt instead of buttermilk next time. It's been proven to be even better. 💋

      @@jonmagnusson6399 use a sieve and a coffeefilter or a kitchen towel and reuse the oil. You can actually use it several times.

    Oh btw, Koreans usually use starch instead of flour. that way you get that SUPER crunch

      Potato starch for batter, always use potato over corn if you can. Corn starch only stays crispy for half an hourish and cannot handle sauces no matter what you do, potato starch will stay crispy pretty much forever. Its what chinese takeaways use for crispy beef & chicken dishes. Another pro tip, the reason you use starch over flour is because starch won't burn so you can leave it in the fryer for longer, in takeaways they add a small amount of Birds Instant Custard powder to the batter, this gives it a nice yellow colour so it looks cooked and not really pale.

      Im korean, no never heard of using starch for chicken, you have right ways? Mostly use flour

      @@user-xu8fy8xi4c The recipe I learned from Maangchi uses AP flour, glutinous rice flour, and potato starch, plus eggs. She mixes it all together into a thick batter to coat the chicken. Works remarkably well.

    I've heard that double frying is good for Korean Fried Chicken. Fry the chicken once at a slightly lower temperature until it's cooked through then fry it again at a high temperature right before you serve it.

      I think it's a similar type of thing when making chips. The first stage is like blanching. The second fry makes it super crispy.

    Korean Fried Chicken is my favorite. Served with sticky rice is perfect. I often cut the chicken in smaller pieces and serve them as appetizers. They are ALWAYS a hit. I don’t always add the hot pepper sauce and it’s still awesome.

    Should have added corn or potato starch to the flour and double fried it for the truly crispy stuff...

      yeah, that was my first thought too. Nowhere near as crispy as it would of been if he had used a corn/potato starch with maybe a little flour. And a double fry would of really got it super crispy.

    Gojujang keeps for a really long time. You can make a really tasty dipping sauce with mayo (I like kewpie mayo), gojujang, and sesame oil. I dip fries, chicken nuggest, roast potatoes, etc in that sauce.

    I used to hate frying when I did it on the stove. What you need, Barry, is a countertop electric deep fryer or fry daddy. Most models have a lid and are cool to the touch on the outside. It makes the whole process so much easier and safer, but the down side is you'll want to fry stuff all the time. 😅😉

    I've travelled all over this planet and Korean Fried Chicken is the best chicken I've ever tasted.

    Mate, love your cooking and of course your other antics too! Just a tip, if you want the vegan version of this it is called Dubu-jorim or Spicy braised tofu. It is literally the same just with tofu instead of chicken. You should give it a go, it will blow your mind.

    Your oil comment was so accurate, I find it so intimidating!
    i made korean fried chicken this weekend too for the first time, strangely! the coating was very different yours, and super tasty i think traditionally they marinade in vinegar and coated in potato and/or corn flour instead of wheat flour (great for me as i'm GF)

    There's a Korean chicken shop where I live. Kim's Frired Chicken or as he cheekily calls it, "the other KFC". It's amazing stuff, nothing else like it.

      Check your local Asian Market if you have one very easy to find the paste there. Its a key ingredient in a lot of korean recipes

    A really nice thing to do with the paste is make a Gochujang mayo using kewpie mayo, makes a really rich tasty spicy mayo. The place I used to work at did a spicy beef that went on top of poke bowls. They would thinly sliced beef and boil it for 30-40 seconds and then mix it with the spicy mayo while still hot.

    Three things: first, Koreans usually fry their chicken twice (first time at a lower temperature to cook it through, second to make it CRUNCHY-CRUNCHY, as Maangchi puts it; refer to her fried chicken videos for more information). Second, they use potato starch instead of flour, and it comes out SUPER crunchy. Third, they make their sauce in a skillet or wok so that they can drop in the finished chicken and toss it good 'n' proper.

    Asda sell genuine Gochujang, like the one you got from Amazon, not the Waitrose 'Gochujang Style' one, plus Chicken drumsticks & wings are much more flavourful in this dish.

    I wish buttermilk was sold in yogurt style containers here in the States. Here, it’s in a carton or jug, and in far larger amounts than a person needs.

    Also, there are several Asian markets in Bristol you could have found the gochujjang in, mate. And across the water in Cardiff. Just takes a bit of a drive, whether by car or by boat.

    I think the gochujang paste you got from Amazon is more authentic than the one in the jar from the supermarket. You can use gochujang in many things like bibimbap, Korean BBQ, etc. I love it!

    I don't even eat chicken (i'm vegetarian) but i love your videos, keep the korean recipes please, i love korean food. In my country it's very hard to get korean products but i found a shop, i saw that gochujang paste and i really want to make a vegetarian version of this. Maybe i'll do.     Barry, you should try making Karaage, it's Japanese Fried Chicken (basically popcorn chicken) and it's SO GOOD
    I make it almost weekly for my sister, roommate, and I. I serve it along side some steamed rice, it's easily my favorite fried chicken.

    I bet your sauce tasted great, but Maangchi's method on making the batter does the crispy pop without leavening. Something to try if you want a more authentic texture next time :) I tried to post the link here a ssecond ago but it got auto-moderated (which is fair). It's called dakgangjeong.

    The ways I use my gochujang is in soybean paste stew and Korean-style slaw (or if you want to ferment it, you can make many styles of kimchi). I use it sparely because I don’t like things too hot. But I love Korean slaw in a taco with steak… 🤤🤤

    I've got a perforated oven pan that I use to mimic frying just to try and live a little healthier and I might try this baked.
    Got a Asian supermarket near me should be able to get the paste if it's not at my local, both in the same shopping complex so it's gonna be easy.

    You can get the Korean Red pepper paste in sainsburys down the world food isle. It's the original Korean version and it's incredible. Expensive, but worth it. They sell kimchi down the same Isle too and black bean paste too.

    I have never seen the gochujang from the first one u bought in store. But the gochujang from the Amazon one is sooo familiar. Infact its the very same one that I got at home. Try making other korean street food too, its gonna be sooo awesome 😋

    I'm addicted to Koren Fried Chicken.
    With the rest of your Gochujang that's coming look at Dalkgalbi which is one my fave all time dishes. It's a chicken stir-fry dish covered with cheese.

    Honestly, never seen it done with plain flour before. I've seen corn or potato starch before... I believe it gives it that light and crunchy texture. If anyone wants to find authentic recipes, you can just search yangnyeom chicken (양념치킨).

    Just get an electric fryer. They're relatively cheap and so much easier then a pot of oil on the hob. Just scoop out the burnt bits with a strainer when you're done, put the lid back on, let it cool and place the whole unit with oil back in a cupboard.

    I really want to try this but hate deep frying too. I might give it a go in the air fryer. I got my sauce from our local Chinese supermarket. It looks identical to the one you got off Amazon.

    You can just say gochujang. Jang (장) means sauce/paste, so gochujang 고추장) sauce is like ATM machine. (Gochu (고추) means chili pepper.)
    While this was a hit, I have to point out the traditional way to have it is with beer. There's even a word for it: chimaek (치맥 = CHIcken + MAEKju (beer) (치킨 + 맥주)). Also, now I want to see Barry try some less universally-loved Korean recipes like dakbal (닭발) and cheonggukjang jjigae (청국장찌개). If he doesn't like them, his reaction's likely to be pretty funny.
    Oh and the Korean word for chicken is dak (닭) or dakgogi (닭고기) (the gogi part just means meat). And the tub of gochujang is how it's usually sold, that thick dark paste.

    One last thing. Traditionally, Korean fried chicken is made with a batter of flour and eggs, rather than a wet-dry dredge. The one I learned uses a 2:1:1 mix of AP flour, glutinous rice flour, and potato starch, plus eggs (one of these days, I'm going to try it with duck eggs). And for extra crispness, you either double-fry it or fry and then bake for 20 minutes at 176ºC, then you sauce it.

    It's really cool seeing you do some korean foods, would you try any other recipes?
    You might have heard of korean fried chicken referred to as chimek which is chicken and beer (mekju) but without the beer its just chicken. There are a few 'loan words' coffee is 'keopi' for example.
    Also, gochujang usually found with the world foods rather than the regular spices and pastes if anyone is looking for it.
