HUSH PUPPY RECIPE: I just cooked the Jiffy hush puppy recipe. (I got it off their website.). It was DELICIOUS! It was as good or better than the seafood restaurants. I can't tell you how PERFECT these hush puppies are! PLUS - THEY'RE EASY TO MAKE!!! Your friends and family will be so shocked when they tase them - there's a sweetness to them but no sugar is added. It is downright delicious. I was looking for a hush puppy recipe to eat with fish and THIS IS IT!!! It is a universal hush puppy recipe that can be used anywhere in the United States (it's not a Cajun recipe). Don't waste your time trying to cook hush puppies from from scratch (like I did) - you GOTTA try this - it's really good. Here's the recipe if you don't want to look it up on the Jiffy website: Preheat oil in deep fryer to 375 degrees. In a bowl, mix together the following: 1 pkg Jiffy Corn muffin mix, 1 egg, 1/3 cup milk, 1/4 cup self-rising (or all purpose) flour, and 1/2 cup green scallions (or diced onion). Mix the ingredients in a bowl very well (it should be kinda like pancake mix batter- I stuck with the recipe and it turned out fine.). Drop by teaspoonfuls into hot oil at 375 degrees. Fry 4 minutes total - 2 minutes on each side. However, if you're using a deep fryer, they should flip over by themselves. (NOTE: I used 1/2 cup green scallions like he did and they taste better than the regular chopped onions.). I didn't have a deep fryer so I put vegetable oil in a pan with 1 1/2 " of oil in it. I didn't have a fryer thermometer either. They didn't cook as well as a deep fryer and the oil was too hot and I ended up almost burning them, but they were STILL delicious. You can't fail with this recipe!!! This is a keeper! Thank you so much for this recipe!!!!
Jiffy makes some nice, inexpensive mixes. I'm not big on the pre-packaged stuff but it's good. I make the Jiffy cornbread to use for my Turkey Stuffing.

Man...I haven't had Hush puppies in 30+ yrs. Last time was in Elko Nevada at a Fish and Chip style restaurant you could set and eat. I was a working musician on the road doing the Casino circuit. This Fish and chip place was owned by an Actor (supporting type) and his wife from Hollywood. Nice people...GREAT food. I got the whole Band to try their Fish and hush puppies. Man was it gooooood! I'm going to make these now that I'm done with the stage! Than you so much for sharing this very cool idea.
Almost perfect! Seriously, it’s the same recipe I learned from a seafood chef in Florida, except he taught me we can use water, instead of milk, beer, etc. to moisten it. Plus, we add jalapeños and sometimes even diced tomato! Best wishes!
Growing up in BAMA, ours were super diced white onions,salt and pepperand some celery diced up even smaller, fried the same way with the exact same batter. Gotta have that Fry Daddy to do it right at home :)

For those of you who turned your heads to an angle when he said "butter beans", as far as I can tell, that's runner beans (Phaseolus coccineus), comes in red and brown varieties. I first heard of "butter beans" in North Carolina, had no idea what it was. West of the Mississippi, you are not likely to hear that or see them in a market. Some people call Lima beans (Phaseolus lunatus) "butter beans" and it's a fair substitute.
I haven't done hushpuppies for way too long, and though I do have a favorite old never-fail recipe, this one is sure simpler. Methinks I'll have to pick up some Jiffy Mix and give it a shot.
